From the original novel:
Their motions were more indicative of rodent than humankind[...] their cloaks were thickly coated with dust and sand. Unhealthy red-yellow pupils glowed catlike from the depths of their hoods.[...] If, as anthropologists hypothesized, they had ever been human, they had long since degenerated past anything ressembling the human race.[...] They had never been seen outside of the protective cloaks and sandmasks, so no one knew exactly what they looked like. But they were reputed to be extraordinarily ugly.


About their language:

From the original novel:
The jawas conversed in low guttural croaks and scrambled analogs of human speech.[...] If they so wished, only jawas could understand jawas, for they employed a randomly variable language that drove linguists mad.[...] When they wished it, the jawas could be understood.


About their nature and habits:

From the original novel:
Local captives had explained the nature of the quasi-human mechanic migrants, the jawas. Travelling in their enormous mobile fortress-homes, they scoured the most inhospitable regions of Tatooine in search of valuable minerals - and salvageable machinery.
From the Star Wars Sourcebook:
Jawas roam the desert world of Tatooine collecting abandonned Droids, broken machinery, and any other scraps of advanced technology they find.[They] gather things people throw away and sell them to others. They have even been known to take equipment of a moisture farmer's hands - especially if it's not guarded or securely locked in place. After a few weeks of rewiring and alterations, these wheeler-dealers may even attempt to sell the equipment to the original owner - at substancial profit, of course. (Most races would consider this treachery and stealing: Jawas consider it good business).
From the original novel:
As two of them bustled about,[...] Threepio fought to stifle an expression of disgust.[...] Apparently hygene was unknown among the jawas.[...] Small insects drifted in clouds about the faces of the jawas, who ignored them. Apparently, the tiny individualized plagues were regarded as just a different sort of appendage, like an extra arm or leg.
From the Star Wars Sourcebook:
[...] they are completely oblivious to such social graces as bathing or cleaning their garments. ("Life in a Jawa Sandcrawler" by QT-3PO)
From the original novel:
Though inherently cowards, the tiny desert scavengers could be pushed too far. The sandcrawler could flatten the homestead - at the risk of inciting the human community to lethal vengeance.
