Meals

Fried Potatoes with Bacon

5-6 med. Potatoes, sliced
4-6 strips of Bacon
I med Onion or 4 Green Onions
1/2 teaspoon Rosemary
salt & pepper
Boil potato slices in water till they are 1/2 cooked. Drain and set aside. Fry bacon in heavy pan, remove bacon, set aside and crumble. To the bacon drippings add potatoe slices, onion and rosemary. Cook on medium high heat till browned, add crumbled bacon, salt and pepper and cook another 4-5 minutes.
This is great served with sour cream and sliced tomatoes

Herb Pasta Salad with Tomatoes & Peas

1-2 teaspoons salt
3 tablespoons water
1/4 cup white vinegar
1/2 teaspoon brown sugar
1/2 teaspoons tarragon
1/4 teaspoon dill weed
2 large garlic clove, minced
1/2 cup olive oil
1/2 pound Penne pasta
1 cup frozen Peas (thawed)
4-6 Roma Tomatoes cut into 1/2 wedges
1/4 cup fresh Basil chopped
Salt & Pepper to taste

Dressing ~ Mix together vinegar, water, tarragon, dill, minced garlic, salt, sugar, pepper and olive oil, set aside. ~ Cook pasta until tender, drain and rinse. In a large bowl toss the pasta with the dressing, add peas, tomatoes, and basil. Mix gently and serve .

Quick Version
Skip First part of recipe and use any good Italian Dressing and add Tarragon to it. Add Pasta, etc as above.

Variations: Great with tiny chunks of Mozzarella cheese. Or substitute Oregano and Marjoram for Tarragon. Or use fresh Spinach instead of Basil.



Ginger Rice Salad

1/4 cup Raisins
1/4 cup Olive Oil
1/4 cup Orange Juice
2 Tablespoons Fresh Ginger
1/2 teaspoon Curry powder
1/2 teaspoon Basil dried
salt & pepper to taste
1/4 cup Nuts
1/2 cup Celery chopped
1 Apple diced (optional)
3/4 cup Green Beans, thawed (French cut)
2-3 cups cooked Rice (white or brown)

In small sauce pan mix together raisins, olive oil, orange juice, ginger, curry powder, basil, salt and pepper. Heat and stir till well blended, bring to near boil, remove from heat, and set aside.
Toss in Large bowl with rice, nuts, celery and beans. Serve plain or on a bed of BokChoy, lettuce or spinach.

Brigid's Milk

1 - 2 cups Milk
1 teaspoon Honey
1/2 teaspoon Cinnamon
dash of ground Caraway Seed (optional)
Heat milk and stir in honey and cinnamon. ~ Delicious!


Desserts

Maine Blueberry Pudding

4 cups Blueberries
1/4 lb. Butter
10-12 pieces of Bread
1/2-1 cup Sugar
1 TBSP Lemon Juice
a dash of salt
1/4 cup Cinnamon Sugar
Put blueberries, salt and lemon juice in a pot with enough water to make a "sauce" (1-2 cups water. Boil and cook for 3-5 minutes. Grease a Loaf Pan with butter. Butter all the bread slices and sprinkle them heavily with Cinnamon (or Cinnamon sugar). Add the bread to the loaf pan one layer at a time, alternating layers with the blueberry mixture. Finishing top layer with blueberry. Cover and chill 4 hours, best if chilled overnight.
Serve with whipped cream, heavy cream, or plain. It is a wonderful treat!

Vinegar Cucunbers

3-5 Cucumbers
1 teaspoon Dill Seed
Apple Cider Vinegar
dash of salt & pepper
Peel cucumbers,run fork down sides, to make lines, slice, and put cucumbers and spices in a bowl, with enough vinegar to cover the slices. (You can also use 1/2 vinegar & 1/2 water, for a milder flavor.) Refrigerate one hour or more. This is a great low cal, fat free snack, and my kids (who hate vegetables)love them.
