Launched in 1977 as Sullivan's Cove Single Malt Australian Whisky at two years old, the minimum period demanded by Australian law.

The Japanese Suntory Company produces a wide variety of whiskies, two of the most famous are the 12 year old malts Yamazaki and Hackushu, both from distilleries set in spectacular forest and mountains. The Company is very secretive about it's whiskies and it should not be forgotten that they own the Scottish distilleries of Bowmore, Glengarioch and Auchentoshan.

This fine Kentucky whiskey is the first to carry the Van Winkle name in over 60 years. Twelve years of aging in charred oak has given this rye whiskey a strikingly brown/deep bronze colour and a slightly spicy finish.

This is rye. Not the type which law demands must be a minimum 51% grain with the remainder made up of what other cereals the distiller fancies. This is made from 100% rye that has been malted first before being crushed, mashed, and fermented on it's journey to the copper pot.

Aged in charred barrels in carefully controlled conditions of temperature and humidity. It all began in 1860, at a place called Early Times Station, now a small crossroads just east of Bardstown, Nelson County, in the heart of Kentucky bourbon country.

Jack Daniel's Single Barrel is bottled slowly by hand, four bottles at a time, on an antique bottling machine. Named the HORIX the machine was built in the 1930s in Pittsburgh and purchased by the disillery for $500. It is hand loaded and filled with whiskey from a single barrel. Each bottle is hand labeled.

Made with over 60% all-malt whisky, Black Bull has more than twice as much malt as most blends. The name Black Bull follows the black Aberdeen Angus cattle, a hearty breed, as is the whiskey.

Wild Turkey Bourbon has been a traditional accompaniment to wild game. It is aged for eight years in new charred oak barrels. Bottled at 101 proof, and now, also at 86.8 proof.

Tennessee whisky filtered through charcoal-packed vats. It is chill mellowed before filtering having first been twice distilled. There are only two distillers of Tennessee whisky, Lynchburgh (Jack Daniels) and Dickel and Co. Dickel's yearly production represents only two or three weeks production at Lynchburg.

Gentleman Jack Rare Tennessee whisky is the distillery's first new whisky in more than a century being introduced in 1988. It is charcoal filtered twice, once before and once after aging. Herb Fannin's description is worthy of a wine buff "Tennessee's answer to fine cognac... Silky and soft...caramel and black currant and mandarin, laced with vanilla and smoke".

Blackadder whiskies are all bottled without chill filtration and without the addition of caramel colouring. Under certain temperature conditions, these whiskies may appear slightly cloudy or "milky". In order to filter out suspended fats which can cause cloudiness and sedimentation the usual practice is to chill the spirit to below freezing point prior to bottling. This removes the possibility of cloudiness but also removes a great deal of the individual character of the whisky.
