TABOULI SALAD

3 Bunches Fresh parsley Stems removed washed & chopped
2 Bunches Fresh mint Stems removed washed & chopped
3 Bunches Scallions Washed & chopped
8 Large Vine ripened tomatoes Diced
2-3 Lemons Juiced
1 Cup Bulgar wheat
1/4 Cup Olive oil, extra virgin
1 Tablespoon cinnamon

 

 

  1. Pour boiling water over bulgar wheat till just covered. It will absorb water in 10 minutes. Any excess water strain off.
  2. Add chopped parsley, mint, scallions and tomatoes in a large mixing bowl.
  3. Add bulgar wheat and cinnamon.
  4. Pour olive oil and lemon juice to taste over salad. Mix well. Taste. Adjust for personnel flavor preferences.
