Circassian Cuisine

THIS BOOK was prepared and edited by Amjad Jaimoukha. The main source is Circassian Cuisine by V. S. Schojen published in Nalchik by the Kabardino-Balkarian Organization of the Voluntary Society of Book Lovers, in 1991 (in both Russian and Circassian). There are more than 110 recipes, some of which had fallen into disuse. The Circassian texts were translated by the editor.

Circassian Cuisine is to be reviewed in the next edition of Cornucopia: A Source Book of Edible Plants edited by Stephen Facciola and published by Kampong Publishings in the USA.
