Welcome to my Recipes pages! Nothing fancy here, just "down home" recipes that I've gleaned from folks and that I've discovered on my own. Every one is tried and true, and guaranteed to be yummy! I'm planning to add more and more recipes as time allows. Please email me if you have any requests, and I'll do my best to find the recipe for you. Mom's Apple Pie


*Preheat oven to 375 degrees.

Ingredients:

6 cups sliced apples
1 cup sugar
2 Tblsp. flour
1 tsp. cinnamon
Dash ground nutmeg
1 Tblsp. butter/oleo
Lemon juice (optional)

Mix dry ingredients. Pour over apples and then stir to coat. Pour into bottom pie crust. Dot with oleo. (Sprinkle a few drops of lemon juice over apples.) Cover with top crust. Cover edges (after sealing and fluting) with aluminum foil and bake at 375 degrees for 25 minutes. Remove foil. Continue baking for additional 20 minutes.

Serve with room temperature slices of cheddar cheese and old fashioned vanilla ice cream.

Chicken Casserole


*Preheat oven to 350 degrees.

Ingredients:

2 to 3 cups cooked chicken
(2 or 3 chicken breasts)
3 cups soft bread cubes
3/4 cup diced celery
1/3 cup chicken butter/oleo
3/4 cup milk
1 (10 1/2 oz.) can Cream of Mushroom soup
1 egg
1/4 tsp. pepper
1/4 tsp. baking powder
1 tsp. salt
1/4 tsp. poultry seasoning
1 onion, finely chopped
1/4 cup buttered bread crumbs

Arrange chicken in bottom of quart casserole. Saute bread cubes, celery, and onion in oleo. Add seasonings and baking powder. Beat egg slightly, add milk and add to bread. Pour over chicken. Pour undiluted mushroom soup over top and cover with buttered bread crumbs. Bake 1 hour at 350 degrees.

Makes 4 to 6 servings.

Easy Turkey Casserole


*Preheat oven to 350 degrees.

Ingredients:

3 cups cooked turkey (broken into small pieces)
2 boxes of turkey flavor Stove Top Stuffing
1 jar of turkey gravy (any brand)

Prepare stuffing mix as directed on box. Mix in the turkey pieces and gravy. Pour into glass baking dish (9x13) which has been sprayed with Pam No-Stick Cooking Spray. Cover with aluminum foil, and bake at 350 degrees for 30 minutes. Remove foil and continue to bake for additional 20 minutes.

Works great for leftovers, too!

Laura's Easy Beef and Noodles


*You'll need a slow cooker for this one!

Ingredients:

1 lb. beef stew meat
1/2 cup hot water
1 Tbsp. beef boullion (powdered)
3 cups No Yolks wide noodles
1 package Brown gravy mix

Put stew meat in bottom of slow cooker/crock pot. Add boullion to hot water, then pour over stew meat. Slow cook for 6 to 10 hours. When meat is fully cooked and tender, use potato masher to break apart. Prepare pasta as directed. Prepare brown gravy as directed. Add pasta and gravy to the stew meat. Mix and serve.

Chocolate Cream Cake
(Thank you to Aunt Frances!)


*Preheat oven to 350 degrees.

Ingredients:

1 cup boiling water
2 squares unsweetened chocolate
1/2 cup soft butter
1 teaspoon vanilla
1 3/4 cup brown sugar (packed)
2 eggs
1 3/4 cup + 2 tablespoons flour
1 teaspoon soda
1/4 teaspoon salt
1/2 cup sour cream

Pour water over chocolate in bowl and let stand until cool. Cream butter, vanilla & sugar till light. Add eggs one at a time. Beat well after each. Spoon flour into dry measuring cup, level off and pour onto waxed paper. Add soda & salt to flour, stir to blend. Add dry ingredients to creamed mixture. Mix well and stir in sour cream and chocolate. Mix till smooth. Pour into greased loaf pan or two layer pans.

Bake at 350 degrees for 1 hour and 15 minutes. ( I usually check it at about 45 minutes).

Frost with Minute Fudge frosting (below).

Minute Fudge Frosting
(Thank you to Aunt Frances!)


*Mix the following in a saucepan:

2 cups sugar
1/2 cup butter
1/4 cup light corn syrup
1/4 teaspoon salt
1/2 cup whole milk
2 squares unsweetened chocolate (cut up)

Stir over low heat 'til chocolate & butter melts. Bring to a full rolling boil, stirring constantly. Boil 1 minute, to the "soft ball" stage. Remove from heat and beat 'til luke warm. Stir in 1 teaspoon vanilla & continue beating 'til of smooth spreading consistency.

Great-Grandma's Lemon Meringue Pie


Special Note: My great-grandmother, Almina Fish, was FAMOUS for her pies!! She used to run a hotel and people would come from miles around for one of Grandma's pies. I want to send a special Thank You to my Aunt Frances for contributing this recipe!

Ingredients:

4 tablespoons lemon juice
1tablespoon grated lemon rind
1 1/2 cups boiling water
3 egg yolks (save whites for meringue)
1 1/2 cups sugar
6 tablespoons cornstarch
4 tablespoons butter
2 tablespoons water in egg yolks

Mix all ingredients in top of double boiler. Cook over medium heat stirring constantly till mixture thickens. Pour into baked pie shell, put meringue on top and brown in hot oven.

Meringue:

3 egg whites
dash of salt
6 tablespoons sugar

Beat egg whites and salt till stiff, add sugar and beat till stiff peaks form. put on top of pie and brown in hot oven.
