SOME OF OUR FAVORITE CAKES

Mandarin Orange Oatmeal
Chocolate Carrot



MANDARIN ORANGE CAKE
1 Yellow cake mix (Pudding in the mix kind)
4 eggs
2 cans Mandarin oranges, (drain 1 can, Leave syrup in other)
1/2 cup vegetable oil
Mix all of the above well.
Bake in greased 9x13 pan @350 degrees 35 minutes or until done.

FROSTING
1 box instant vanilla pudding
20 oz. can crushed pineapple - undrained
8 oz. Cool whip
Mix dry pudding mix with cool whip, fold in pineapple with juice.
Frost cooled cake and refridgerate
Better the next day! I serve this when I have club.
Note: A friend just tried this with a lemon cake mix and said it was
"EVIL, A weightwatchers nightmare!" LOL

OATMEAL CAKE

1 cup oatmeal
1 1/2 cup boiling water
1 stick oleo
Mix and let stand for 20 minutes
Add:
2 eggs
1 cup white sugar
1 cup packed brown sugar
1 1/2 cup flour
1 tsp each of baking soda, vanilla, and cinnamon
1/2 tsp each of salt and nutmeg

Bake in greased 9x13 pan 35 to 45 minutes at 350 degrees

This is good with chocolate or maple frosting.
A "heavy" but moist cake.

GRANDMA ANNA'S
COLD COFFEE CHOCOLATE CAKE
1/2 cup cocoa
1/2 cup vegetable oil
3 eggs
1/2 cup cold coffee
1 tsp vanilla flavoring
l/4 tsp salt
2 cups sugar
2 cups flour
1 tsp baking soda
Mix all above ingredients well.
Add 1 cup boiling water and mix.
Batter will be very thin.
Pour into greased 9 x 13 pan
Bake 350 degrees 35 to 40 minutes or until top springs back.
Recipe from the Grandmother of one of my best friends.

FROSTING
1 1/2 cups sugar
6 Tbsp oleo or butter
6 Tbsp milk
Mix and bring to boil, boil 1 minute
Remove from stove and add 3/4 cup real chocolate chips
Stir until chips are melted
Let cool a bit, beat, and frost cooled cake.

ROGER'S FAMOUS CARROT CAKE (Stolen from Palmer House)???
Shame on you Rog!!

Preheat Oven to 350 degrees
Grease a large 9 x 13 cake pan
In a large bowl, whisk together until well blended:
5 large eggs
3 cups sugar
1 cup oil
1 cup buttermilk
1 Tbsp vanilla
Whisk in:
3 cups flour
1 Tbsp baking soda
1 Tbsp cinnamon
1/2 tsp salt
Stir in:
3 cups packed shredded carrots
1 20 oz can crushed pineapple (drained)
1 1/2 cups walnut pieces
1 1/2 cups sweetened coconut
Bake one hour. May take more time depending on your oven and pan.
Check for doneness with toothpick.

Frost with cream cheese frosting made with orange juice and a little orange zest,
You may sprinkle some chopped walnuts over frosting.
Or instead of frosting just dust with powdered sugar.
