Corn Sweet Potato BBQ Beans

CORN CASSEROLE

1 can whole corn
1 can creamed corn
2 beaten eggs
1 stick (1/4 cup) butter or oleo
8 oz. sour cream
1 box jiffy corn bread mix
Mix together and bake in greased 9 x 12 dish
350 degrees 45 minutes

SWEET POTATO CASSEROLE

3 cups cooked, mashed sweet potatoes or yams
1 cup sugar
2 slightly beaten eggs
1 tsp vanilla
1/2 cup milk
1/2 cup melted oleo or butter
Mix and put in greased casserole dish

Topping for Sweet Potatoes
1 cup packed brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup melted butter or oleo
Dash of nutmeg
Crumble and sprinkle over potatoes
Bake 30 minutes at 325 degrees
Note: You can make this the day before, cover and refrigerate.
My family insists on this for Thanksgiving dinner.

BBQ BEANS
2 16 oz cans Pork and Beans, drained
3/4 cup KC Masterpeice BBQ sauce
1/2 cup brown sugar
1/2 onion, chopped
1 tart apple peeled and chopped
2 T. golden raisins
Mix and put into 1-1/2 quart casserole dish.
Put 3 halved strips of bacon on top
Bake at 350 degrees 60+ minutes
We like our beans 'thicker', so I usually bake longer.

TACO PIE
1 tube crescent rolls
1 1/4 lb. hamburger
1 envelope taco seasoning
1/2 cup water
Chopped green pepper, diced onion, sliced ripe olives (in amounts you like)
1 cup sour cream
Crushed corn chips
Shredded cheddar cheese

Brown hamburger, onion, green pepper
Add taco seasoning and water, simmer 5 minutes
Add sliced olives
Spread crescent dough in 9 or 10 inch pie pan,
Sprinkle some crushed corn chips over dough.
Layer 1/2 the meat mixture, shredded cheese, other 1/2 of meat,
Spread sour cream over top. Add more shredded cheese and top with corn chips.
Bake 375 degrees for 25 minutes.

Before serving top with shredded lettuce and chopped tomato.
Or serve them on the side with hot sauce, more sour cream, or condiments of your choice.

BURITTO BAKE
1 cup Bisquick
1 can refried beans
1/4 cup water
Mix beans, Bisquick, water together and spread in greased 10 inch pie plate.

Layer on top of bean mixture.
1 lb. hamburger cooked with onion and taco seasoning
1 cup thick salsa
1 1/2 cups shredded cheese
Bake 30 minutes at 350 degrees
Top with shredded lettuce, chopped tomato
Serve with sour cream on the side.

HOMEMADE TACO SEASONING
2 tsp. chili powder
1 tsp. paprika
1 1/2 tsp. ground cumin
2 tsp. dried parsley flakes
1 tsp. onion powder
1 tsp. dried onion flakes
1/4 tsp. red pepper flakes
1/2 tsp. garlic powder
1/2 tsp. oregano
1/2 tsp. corn starch (optional)

I triple this recipe and store in tightly covered jar in fridge.
2 1/2 TBSP = 1 package of 'store bought' seasoning.

WINTER CASSEROLE
1 small head cabbage, coursely chopped
1 chopped onion
1 lb. lean ground beef
1/4 cup raw rice
1 can tomato soup
1 cup hot water
Salt and pepper to taste
Place chopped cabbage in 2 qt. casserole dish.
Brown ground beef and onion. Drain
Add rice, soup, water, salt and pepper. Pour over cabbage.
Bake at 350 degrees for 1 1/2 hours.
Cabbage should be crisp tender.

OVERNIGHT CHICKEN MACARONI
2 cups cooked, cut up chicken
2 cups uncooked macaroni
2 cans cream of chicken or cream of mushroom soup
(or what the heck, use 1 can of each!) 2 1/3 cups chicken broth
1/2 cup chopped green pepper
Small onion chopped
Chopped celery (optional)
1/4 lb. cheddar cheese, cubed
Mix all together, put in casserole, cover, and leave in fridge overnight.
Bake 350 degrees for 1 hour.
Sprinkle crushed potato chips or crushed corn flakes on top,
last 20 minutes of baking time.

SPINACH RICE PIE
(This is better than it sounds!)
2 pkg (10 oz.) frozen spinach
5 Tbsp. Oil
1 clove garlic crushed
1 medium onion, finely chopped
pinch of crushed red pepper
4 eggs, slightly beaten
1/4 cup milk
5 Tbsp parmesan cheese
1 cup cooked rice
8 oz. shredded mozzarella cheese
Cook spinach and squeeze dry
Saute onion and garlic in oil
Mix spinach, eggs, parmesan, milk, and half of mozzarella cheese.
Add the onion mixture and rice.
Butter 10 inch pie plate, fill with mixture.
Bake at 375 degrees for 20 minutes.
Sprinkle remaining mozzarella over top and bake 10 minutes longer.
