I have collected cook books from almost every State visited, plus many of those wonderful church cook books. My friends and relatives are pretty good cooks too!! This page is dedicated to the friends who have 'gone on ahead'.

Chocolate Chip Potato Chip Peanut Butter
Best Sugar Roll Out Sugar Surprise Meringues
Oatmeal Raisin Molasses Snap Bits O Brickle

CHOCOLATE CHIP (Just like the ones at the mall!)

2 cups butter
2 cups packed brown sugar
2 cups white sugar
4 eggs
2 Tbsp vanilla extract
4 cups flour
5 cups oatmeal (that has been put in blender and blended to flour consistency.)
3/4 Tbsp salt
2 Tbsp baking soda
2 Tbsp baking powder
24 oz. chocolate chips
Nuts if desired
Cream butter and sugars. Add eggs and vanilla, mix well
Add remaining dry ingredients
Fold in chips and nuts
Form into walnut size balls, Bake 8 to 9 minutes at 375 degrees
Don't overbake or they will be dry.
This makes a very large batch and can be cut in half.

POTATO CHIP COOKIES (In memory of Darlene Shaw)

1 1/2 cups white sugar
1-1/2 cups oleo or butter
2 egg yolks
1-1/2 cups crushed potato chips
3 cups flour
2 cups chopped nuts (pecans are best)
2 tsp vanilla
Cream sugar, oleo, egg, and vanilla
Add crushed chips and flour
Add nuts
Drop by teaspoon on ungreased cookie sheets
Bake 350 degrees for 15 minutes

PEANUT BUTTER COOKIES
The spices make these very different and good.
Recipe from Caroline Scheppler

1 cup oleo
1 cup peanut butter
2 cups packed brown sugar
Note: You can use 1 cup white and 1 cup brown sugar instead
2 eggs
2 tsp vanilla
1/2 tsp salt
1 tsp ginger and 1 tsp cinnamon
1 tsp baking powder
1-1/2 tsp baking soda
2 1/2 cups flour
Make into 1 inch balls, flatten with fork
Bake on greased cookie sheets 8 to 10 minutes at 375 degrees

SUGAR COOKIES
In memory of a good neighbor, Margie Deets

1 cup powdered sugar
1 cup white sugar
1 cup butter or oleo
1 cup vegetable oil
2 eggs
2 tsp vanilla
4 1/2 cups flour
1/4 tsp salt
1 tsp baking soda
1 tsp cream of tartar
Cream sugars, butter and oil, add eggs, mix well
Add dry ingredients
Form into 1 inch balls. Press with sugared glass
Bake 10 to 12 minutes at 350 degrees

SURPRISE MERINGUES
We enjoy these at Christmas time.

3 egg whites
1/8 tsp cream of tartar
3/4 cup sugar
1/8 tsp salt
1 tsp vanilla
1 cup mini chocolate chips
1/4 cup chopped walnuts or pecans
Beat egg whites and cream of tartar to soft peaks.
Gradually add sugar, salt and vanilla, beat until sugar is dissolved and mixture forms stiff peaks. About 5 to 8 minutes.
Fold in chips and nuts
Drop by rounded teaspoons on greased cookie sheets.
Bake 300 degrees for 30 minutes until lightly browned.
Cool on baking sheets. Store in airtight containers.
Makes about 4 dozen.

COLORADO OATMEAL COOKIES

3 eggs
1 cup raisins
1 tsp. vanilla
Beat the eggs, add raisins and vanilla.
Cover bowl with plastic wrap and let sit one hour
1 cup butter or oleo
1 cup brown sugar
1 cup white sugar
2 1/2 cups flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 cups oatmeal
3/4 cup chopped pecans
Cream butter and sugars, add egg-raisin mixture, mix.
Add other dry ingredients.
Drop by tsp on ungreased cookie sheets.
Bake at 350 degrees, 10 to 12 minutes.
(The secret is in soaking the raisins, or so the recipe says.)
We like these with golden raisins

MOLASSES (SNAP) COOKIES
Served in the school lunchroom.
I don't remember cookies this good when I was in school!

1 1/2 cups vegetable oil
2 cups sugar
1/2 cup molasses
2 eggs
4 cups flour
1 Tbsp plus 1 tsp baking soda
1 tsp ground cloves
1 tsp ground ginger
2 tsp cinnamon
1/4 tsp salt
Cream oil, sugar, molasses, add eggs, then dry ingredients.
Roll into 1 inch balls, dip in sugar. Do not flatten.
Bake at 375 degrees on greased cookie sheets.
Take out of oven as soon as they puff and crack. About 8 to 10 minutes usually.

SUGAR COOKIES (ROLL OUT KIND)
Recipe from my friend Jeanne

3 cups powdered sugar
4 sticks oleo
2 eggs
2 tsp vanilla
5 cups flour
2 tsp baking soda
pinch salt
Cream powdered sugar and oleo, add eggs and vanilla, mix well
Add dry ingredients and mix. Cover and cool dough overnight.
Roll out, cut into desired shapes. Bake 350 degrees, 10 minutes.

BITS OF BRICKLE

1 cup packed brown sugar
1 cup white sugar
1 cup oleo
3 beaten eggs
1 tsp vanilla
1/2 tsp salt
2 tsp baking soda
2 tsp cream of tartar
3 1/2 cups flour
1 bag bits'o'brickle chips
Cream sugars, oleo, add eggs then dry ingredients.
Fold in chips.
I also add some mini chocolate chips and/or vanilla chips to this recipe.
Bake on lightly greased cookie sheets, 350 degrees, 10-12 minutes
