PINEAPPLE SALAD

1/2 Cup Drained, Crushed Pineapple
1/3 Cup Diced Celery
2 Medium Diced Apples
1/2 Cup Grated Cheddar Cheese
1 Cup Prepared Whipped Cream (or Topping)
1/3 Cup Mayonnaise
1 TB Sugar

Combine the first four ingredients and mix well.   Fold Mayo and sugar into the whipped cream and then add to salad, mixing gentley.

RHUBARB CAKE

5 Cups Chopped Rhubarb
1 Cup Sugar
1 (3oz) Package Strawberry Gelatin
3 Cups Miniature Marshmallow
1 (18 1/4 oz) Package White Cake Mix (Prepared)

Spread rhubarb over bottom of a 9" x 13" baking dish.  Sprinkle with sugar and gelatin.  Sprinkle marshmallows evenly on top.  Pour the prepared cake mix batter over the mixture.  Bake 50 - 55 minutes at 350 degrees (F).

EASY QUICHE

1 prepared pie shell
1 1/2 Cups of Cheese (Use a variety of for more flavour)
1/2 - 1 Cup Diced Meat (Ham, Bacon, Crab, Shrimp, etc)
Bits of Cooked Veggies (if desired)
3 Eggs
1/2 tsp Salt
1 1/2 Cups Milk
sprinkle of Paprika (if desired)
 

Heat oven to 375 degrees (F).  Bake pastry shell for 5 minutes as per package directions.  Let Cool.  Sprinkle pie shell with 3/4 cup cheese, diced meat and veggies (if used).  In separate bowl, beat eggs, salt, paprika, and milk until blended but not frothy.  Pour into pie shell.  Sprinkle with remaining cheese and bake 35 - 45 minutes or until a knife inserted in centre comes out clean.  Let stand 10 minutes until serving.  Serves 6.

** Any combination of cheeses can be used:  Swiss, Monterey, Cheddar, Feta, use your imagination.  The diced meat can be mixed too - I like shrimp & crab (imitation).


GLAZED CHICKEN

3 pounds of Chicken Pieces
1/3 Cup Ketchup
2 -  1/4 oz packages of Beef Broth
1 TB Minced Onion
2 tsp Soya Sauce
1 tsp Prepared Mustard
3 TB Water

Arrange chicken parts in a 4 litre (3 qt) casserole.  Mix the remaining ingredients in small bowl and spoon evenly over chicken.  Cover and bake for 1 - 1 1/2 hours until tender at 350 degrees (F).
SPICED RED CABBAGE

4 Cups Shredded Red Cabbage
1 Medium Onion, Chopped
1 Medium Apple, Peeled, Cored, and Chopped
3 TB Cider Vinegar
3 TB Brown Sugar
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1/4 tsp Cloves
Salt & Pepper to Taste
1/4 Cup Water

Combine all the ingredients in large sauce pan and simmer at least 45 minutes.  Flavour increases with simmering time - I often simmer it for at least 2 hours.
