Pumpkin Cheesecake – 3 Points

  • 24 oz. Fat-free cream cheese (room temperature)
  • 3/4 cup pumpkin
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2/3 cup egg substitute
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 2 tablespoons graham cracker crumbs

    Mix on high-speed cream cheese, pumpkin, sugar and vanilla. Then add egg substitute, cinnamon, and cloves; blend well. Spray 9" pie plate, Sprinkle with graham cracker crumbs. Bake 45 minutes at 325 degrees until set but not firm. Serve with Cool whip.

    Makes 8 servings.
