Two Potato Scallop – 5 Points

  • 3 cups each sliced peeled sweet and white potato
  • 2 large cloves garlic, minced
  • 1/3 cup freshly grated Parmesan cheese
  • 2 Tbsp. all purpose flour
  • 1/4 tsp. each of salt, pepper and dried thyme
  • 1 1/2 cups chicken or vegetable stock

    In large bowl, mix together sweet and white potatoes, garlic, cheese, flour, salt, pepper and thyme. Transfer to 8-inch square pan sprayed with nonstick cooking spray.

    Pour in stock. Cover with foil and bake in 375 degrees oven for 50 minutes. Uncover and bake for 30 to 40 minutes longer or until golden brown and potatoes are tender.
