Scotcharoo's
1 cup light corn syrup
1 cup sugar
1 cup Peanut Butter
6 cups Rice Krispies
1 12oz. package Chocolate Chips
1 6oz. package Butterscotch Chips
Heat corn syrup and sugar until dissolved. Add peanut butter, remove from heat and add Rice Krispies. (mix fast) Immediately pour into buttered 9x13 pan. Spread evenly. Set aside. melt together Chocolate and butterscotch chips. Stir until smooth, spread over rice krispies. Refrigerate until set. cut into 1 1/2" squares.

Lemon Bars
1 package yellow cake mix
1 box instant lemon pudding
8 ounce cream cheese
1 tsp Lemon juice
1/3 cup sugar
2 eggs
1/2 cup oil --or as I do use apple sauce instead to reduce fat.Mix cake mis, pudding, 1 egg and oil (apple sauce) until crumbly Set aside 1 cup of this mixture. Press the rest of mixture into 9 x 9 pan. Bake for 15 minutes at 350 degrees.
Beat cheese, sugar lemon juice and 1 egg until light and smooth. Top baked base with cheese mixture, then top with reserved crumb topping.
Bake for an additional 15 minutes.
Zucchine Bread
3 eggs
1 cup oil (or apple sauce for lower fat)
2 cups sugar
2 cups succhini
3 cups flour
1 teas salt
3 teas cinnamon
1 teas baking soda
1/4 teas baking powder
1 teas vanilla
1/2 cup nuts (if you wish them)
Beat eggs, add oil (apple sauce), sugar and vanilla, mix well. Add zucchini and dry ingredients. Pour into greased loaf pans. Bake at 325 degrees for 60-70 minutes. Start checking for doneness at 60 minutes then every 4-5 minutes till done.

Robbie's Chili
2 pounds ground beef (I use extra lean myself)
1 cup chopped onion
2 cloves garlic (finely minced)
1 large green pepper--chopped
4 tbl chili powder
2 tbl sugar
3 1/2 cups tomatoes
1 cup tomatoe sauce
1 cup water
1/2 teas salt
1 tbl flour mixed with 2 tbl water
2 3/4 cup kidney beans
Brown ground beef,add onions, galic and green peppers cook until beef is done. Add chili powder, sugar, tomatoes,tomatoe sauce, water and salt. Simmer for about 1 1/2 hours. If you wish to thicken the chili stir in the flour and water paste and cook for an additional 5 to 10 minutes. Just before serving add cooked kidney beans and cook for an additional 15 minutes.

Almond Chicken Salad
1 package cole slaw mix
3 cups Chicken Breast-----cooked and cubed
1 package Sesame Chicken "Top Ramen" (do not cook)
1/2 cup oil
3 T. vinegar
2 T. sugar
salt and pepper to taste
Toss together cole slaw, chicken and broken ramen noodles. Mix together oil, vinegar, sugar, flavor pack & oil packs from Top Ramen package, salt and pepper.. Toss together well. Set aside. Toast 1/2 cup almond slivers in 350 degree oven for 5-8 minutes. Sprinkle Almonds on top and serve.

Puffed Cheese and Cauliflower
This is a wonderful dish.
1 med. head Cauliflower
2 T. flour
3 eggs-seperated
1/4 cup Margarine
1 cup milk
1/4 cup fine bread crumbs
1 cup grated Cheese
Salt & Pepper to taste
Cook cauliflower until tender - drain. Heat Margarine in sauce pan, add flour, stir over low heat two minutes. Remove from heat, slowly add milk. Stir until smooth. REturn to heat. Stir until boiling, add salt, pepper and most of the bread crumbs. Stir in egg yolks, cheese and cauliflower. Beat egg whites until stiff. FOLD into mixture. Pour gently into ovenproof dish. Bake 400 degrees for 30 minutes.

Apple Dumplings
SYRUP
1/4 tsp. Cinnamon
1/4 cup margarine
2 cups Sugar
1/4 tsp. nutmeg
2 cups water
Mix together, Bring to boil on top of stove for 2 to 3 minutes.
DUMPLINGS
2 cups Flour
1 tsp.salt
1/2 cup milk
3/4 cup shortening
2 tsp Baking Powder
Mix together as you would pie crust. Roll crust out to 1/4 inch thick. Cut into 6 4x6 rectangles. Place one apple (peeled, cleaned and quartered onto each of the rectangles. Place a dab of butter on top of apple, and sprinkle with sugar & cinnamon. Place the six dumplings into a 13x9 pan and pour the syrup mixture over them. Bake at 375 degrees for 35 minutes. Serve warm with vanilla ice cream.
