Welcome to "A Little Bit's" Recipes. Sure hope all my visitors are not getting tired of the "A Little Bit" thingie, ;0). Here I have some recipes that my mom use to fix and then I am fortunate enought to have a couple that were my grandmother's, however most of my grandmothers best were just in her head, never written down. You know the kind that has a pinch of this and a tad bit of that, which always makes for the best tasting foods... And of course I will throw in a few of my own. Baked Pork Chops

6 Pork Chops1 tsp. Salt
1/8 tsp. pepper2Tbsp. Brown Sugar
1 tsp. Prepared Mustard Juice of 1/2 Lemmon
Wesson Oil(brown Chops in)2 - 8oz cans Tomato Sauce
1/2 cup water1/2 cup firmly chopped Celery
Sprinkle Chops with Salt & Pepper, Brown in hot oil in skillet.
Place in shallow baking dish.
Combine remaining ingredients and pour over Chops.
Cover & bake at 350 approximately 1 1/4 hours or until chops are tender.



Breakfast Casserole
Brown 1 lb. sausage (hot or mild) well. drain. Remove crusts from 6 - 7 slices of bread and butter both sides. Cover bottom of dish with bread. Spread sausage over bread. Grate 6 - 8 ozs. of cheddar cheese (sharp or mild) and spread over sausage. Mix 6 eggs with two cups Half & Half ( or Low-Fat milk) and 1/2 tsp. salt and a few shakes of pepper. Refrigerate overnight. Next morning bake at 350 for 30 minutes or longer to the consistency you like.
This is a great way to fix breakfast for holiday company.....



Roast Beef, New York Style
3 lbs. rib or eye of round roast2 Tbsp. olive oil
2 Tbsp. salt1 tsp. galic powder
1 tsp.paprika1 tsp. pepper
2 tsp. oregano
Mix together the salt, garlic powder, paprika. pepper and oregano.Rub the roast with the olive oil then coat the roast with the mixture.Then bake @ 350 for 20 minutes per pound for med. rare, or 40 minutes for well done or use a meat thermometer. Let meat stand for 10 minutes before slicing.



Chicken & Rice Casserole

Melt 1 Stick Margarine in baking dish, add 1 cup Uncle Bens long grain rice (straight from box), add 1 green bell pepper, 1 onion (chopped). Lay chicken breast on top Mix 2 can's Golden Mushroom soup and 2 can's water (mix well), pour over chicken and bake at 400 for about 1 1/2 hours (cover 1 hour and uncover for 1/2 hour).



14 Day Slaw

1 1/2# Cabbage head (chopped or shredded)
1 sm. onion 1/2 green pepper
*1/2 cup sugar *1/2 cup veg oil *1/2 cup vinegar
*bring these to a boil and pour over cabbage mixture celery seed (optional) Seal & refrigerate - will keep 14 days



Chocolate Custard

4 (heaping) Tbsp.Flour 1/2 tsp. salt
4 Tbsp. cocoa 1 1/2 cups sugar
4 egg yolks 4 cups milk
cook in top of double boiler until thick - add vanilla.



Sweet Potatoe Pie

Combine
2 cups cooked mashed sweet potatoes
1 cup milk 2 eggs
1/2 cup sugar 1 Tbsp butter
1/2 tsp nutmeg 1/2 tsp vanilla
1 Tbsp. self-rising flour
Pour into unbaked pie shell and bake at 350 until filling is firm. Stove should be preheated. Fill pie shell just to the top.....



Milky Way Cake

8 Milky-Ways1/2 tsp. soda
1/2 lb.butter1-1/4 cup buttermilk
2 cups sugar1 cup pecans
4 eggs2-1/2 cup flour

Cream 1 stick of butter & sugar together. Melt 1 stick butter with Milky-Ways and save to add to batter last. Add eggs to sugar & butter. Add soda to flour & add alternatley with milk to sugar mixture & mix well. Then mix candy mixture and nuts with batter. Bake in 3 9" pans at 325 for 35-40 minutes.

Icing

2-1/2 cups sugar1 cup milk
1 stick butter6 oz. chocolate chips
1 cup marshallow cream
Combine sugar & milk and cook to soft ball stage. Remove from heat and add rest of ingredients. Stir & melt (until chocolate chips are melted) beat until cool.



Hawaii Frozen Pie

Prepare your favorite graham cracker pie crust; Then slice thin 2 bananas and place in the bottom of pie crust. Beat together 1 can condensed evaporated milk and 1/3 cup lemon juice. Pour on top of bananas. Drain real good No. 2 1/2 size can crushed pineapple (be sure to drain well) and place on top of condensed milk. Whip 1/2 pint whipping cream with 1/4 cup of sugar added and add on top of pineapple. Sprinkle on top 1/4 cup coconut, 1/4 cup maraschino cherries and 1/4 cup nuts. Place in refridgerator for approximately 1 hour before serving.



Nuts & Bolts

Melt:

3/4 lb. butter(or margine), add 3 Tbsp. Worchestershire sauce, 1 Tbsp. garlic salt, 1 Tbsp. celery salt, 1 tsp. tabasco sauce.

Pour over:
1 Box Rice Chex1 Box Wheat Chex
1 Box Cherioes1 Box Thin Pretzels

Put in 250 degree oven in broiler pan. Stir gently every 15 minutes for 30 minutes.
Melt 1/4 lb. butter(or margine) and pour over and add 1 lb. mixed nuts. Cook 30 minutes longer stirring gently every 10 minutes or so. Spread out on paper towels to cool. Store in a air tight container.
