SAVORY CHICKEN NOODLE SOUP

This recipe is GREAT because it has lots of flavor!

  • 1 to 2 cups uncooked egg noodles
(it called for 1 cup of fine noodles, but I use 2 cups of whatever size I have.)
  • 1 Tbsp dried minced onion
  • 2 1/2 Tbsp chicken bouillon granules
  • 1/4 tsp pepper
(the recipe called for 1 tsp. but it was too hot for our taste)
  • 1/4 tsp celery seeds (I use celery salt)
  • 1/8 tsp garlic powder
  • 1 bay leaf
  • 7 to 8 cups of water
  • 1 carrot, finely chopped
  • 3 cups chopped cooked chicken

Combine all the ingredients EXCEPT the chicken in a large pot. Bring to a boil. Reduce the heat; simmer for 15 minutes, stirring occasionally. Discard the bay leaf. Stir in the chicken. Simmer for 5 minutes longer, stirring occasionally. (approx. 8 servings)

OATMEAL BARS

I changed the following recipe to using a 9X13 pan
and it turned out like CAKE, instead of bars, and it was SUPER!!!
Just increased the cooking time to closer to 35 minutes.
Following is the recipe as it was in a local cookbook:

  • 1 1/2 cups boiling water
  • 1 cup oatmeal
  • 1 stick margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp. salt
  • 1 tsp. soda

Pour boiling water over oatmeal. Let cool. Cream the margarine, sugars, and eggs and add cooled oatmeal. Add remaining ingredients. Mix. Bake at 350 in a greased 13X15 pan, 20 to 25 minutes or until bars spring back.

FROSTING:
  • 6 Tbsp. margarine
  • 1/4 cup milk
  • 2 cups coconut
  • 2/3 cup brown sugar
  • 1 cup chopped walnuts
  • 1 tsp. vanilla

Mix ingredients in saucepan. Cook slowly for 10 minutes. Pour over slightly warm bars. (I used the microwave. 1 minute on high, stirred; 5 minutes on medium, stirred; 5 more minutes on medium, stirred; done.) She noted that these bars freeze very well.

TACO SOUP

  • 1 lb. hamburger
  • 1 1/2 cups water
  • 1 can (15 oz.) stewed tomatoes
  • 1 can undrained kidney beans
  • 1 (8 oz.) can tomato sauce
  • 1 pkg. taco seasoning

Boil and strain hamburger (I found the thought of "boiling" hamburger a bit odd at first, but it gets all the fat out and tastes just fine!)
Mix the rest of the ingredients together. Add hamburger.
I simmer this in a crock pot. It is great for Pot Lucks because it can simmer all day!
Serve with grated cheese, taco chips, and sour cream if desired.

TENDER BAKED ROUND STEAK

  • 1 - 2 lbs. round steak, cut into cubes
  • 1/2 - 1 pkg. dry onion soup mix
  • 1 can of cream of mushroom or cream of chicken soup

Place round steak in a buttered casserole dish. Sprinkle dry onion soup mix over the top. Cover it with the cream soup. (This looks "dry" but it works!)
You can add about a 1/2 can of water to make more gravy.
Cover and bake at 350 for 2 to 3 hours.
This makes a delicious gravy. Serve over potatoes or noodles.

ORANGE SALAD

  • 3 cups water (Can use juice from the oranges as part of the water)
  • 1 small box tapioca pudding
  • 1 small box COOK vanilla pudding
  • 1 small box orange Jello
  • 12 oz. Cool Whip
  • 1 can mandarin oranges, drained

Mix water, pudding and Jello mixes together. Bring to a boil in saucepan or in microwave.
Remove from heat and cool. Add Cool Whip and mandarin oranges. Chill in refrigerator.

EASY FLUFFY WHITE FROSTING

My Husband's Favorite!

This is MUCH cheaper than the boxed kind,
and tastes the SAME!

  • 1 egg white
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1/4 tsp. cream of tartar
  • 1/4 cup boiling water

Mix ingredients together and beat with electric mixer until it stands in peaks. Jason loves this on German Chocolate cake.

DIRT PUDDING

  • 8 oz. cream cheese, at room temperature
  • 1/2 cup powdered sugar
  • 12 oz. frozen dessert topping, thawed
  • 2 small packages chocolate instant pudding
  • 2 1/4 cups milk, cold (I was wondering when I saw that comment who's milk ISN'T "cold", but...)
  • Approx. 20 oz. chocolate sandwich cookies, crushed.

Combine cream cheese and powdered sugar in a bowl. Using an electric mixer, beat until smooth and creamy. Fold in dessert topping. Set aside. Combine pudding and milk in another bowl and beat with mixer until thickened. Fold pudding and 1/3 of crushed cookies into cream cheese mixture until mixed thoroughly. Press half the remaining cookies into bottom of a clear serving bowl. Add pudding mixture. Sprinkle remaining crushed cookies over the top. CHILL until ready to serve. This dessert is a nice looking dessert for a pot luck or supper for company -- and MMMMM, so GOOD!
