Happy Valentine's Day!

One of the most romantic holidays is approaching us rapidly. Are we going out? Staying in? What should I make if we stay home?

Good questions! I prefer to stay home...this way I know the quality of the dinner is perfect, the ambiance is what you create, and you know you will be happy with the meal. My all time favorite Valentine's dinner consists of shrimp scampi, rice pilaf, and sauteed spinach or green beans and salad. For dessert I always make a homemade chocolate cake in a heart-shaped Wilton cake pan. I fill and top it with chocolate mousse and chocolate shavings (this reminds us of our wedding cake). Of course we always have white wine or champagne and a few candles. If we're lucky it's just the two of us...usually not however...the kids always want to join us for special occasions, and this night is no different.
