veggie soup
i use OXO (boullion) cubes....about 3 for a large pot of soup.  dump 'em into a pot of water.  add rice, barley (my personal favourite), pasta, whatever...then chuck in whatever veggies you want.  i sometimes use fresh veggies...if i have time...if not, i throw in a package of frozen mixed vegetables.  and i ALWAYS add mushrooms.  and lots of garlic.  just my thing.  simmer, and eat it up.  freezes well, too.

 No Meat Cheeseburgers
2 egg whites, lightly beaten
1 Cup fat free cottage cheese
1 envelope instant onion soup mix
1 Cup rolled oats
in a medium bowl, stir together the egg whites, cottage cheese and soup mix
until well combined.  stir in oats.
using about 1/3 Cup of mixture for each burger, shape the mixture (i used
my hands) into 6  half inch thick patties.  spray an unheated skillet with
no-stick spray.  heat the skillet over medium heat.  add the patties and
cook about 3  minutes on each side, until golden brown.
makes 6 patties, 6 servings
