Recipes



Starters:



Guacamole: Serve as a dip with tortilla chips or with tacos.
2 ripe avocadoes
1 medium onion
1 large tomato
1 tablespoon chopped cilantro
1/2 cup sour cream
1 tablespoon lemon juice
Tabasco sauce, to taste

Cut and peel avocadoes in half; discard pit and shell. Mash well with a fork until smooth. Chop the onion and tomato and mix with the chopped cilantro. Add sour cream, lemon juice and tabaso sauce to mixture.


Tomato Salsa: Serve as an appetizer or with tacos or burritos.
1 large tomato, finely chopped
1 medium red onion, finely sliced
2 tablespoons chopped cilantro
3 tablespoons lemon juice
2 teaspoons lemon peel

Combine all ingredients in a bowl and chill overnight in the refrigerator.


Drinks:



One Margarita
2 oz. white tequila
1 1/2 oz. fresh lime juice
1 oz. Triple Sec or Cointreau
Crushed ice

In a blender add tequila and lime juice then add the Triple Sec or Cointreau with four oz. crushed ice. Blend until frothy. Enjoy drink as is or rub the rim of the glass with lime, then dip it in salt.


Main Dishes:



Texas Chili- Serve with rice.
3 pounds lean ground beef
4 buds garlic
6 tbs. chili powder
1 tsp. cilantro
1 large onion
16 ounces of can tomato paste
8 ounces of can ranch style beans (optional)
16 ounces of V8 or tomato juice
4 bouillon beef cubes
salt and pepper to taste

Brown beef and add the chopped onion, add the chili power, cilantro, and saute for a few minutes. Add tomato paste and mix in well. Then add the tomato juice or V8. Next add beans (optional) and bouillion cubes, simmer on low heat for at least 2 hours, stirring occasionally.


Veggies:



Texas Chili Hot Corn- Popular dish is Mexico, try it you'll like it.
4 large ears of corn, sliced into 1-inch rounds
4 tablespoons butter, melted
2 tablespoons choped cilantro
1 tablespoon tomato paste
1/4 teaspoon chili powder
1/4 teaspoon salt

Fill a large pan with water and bring to a boil. Add corn and simmer until corn is tender about 20 minutes and drain water. Combine butter, cilantro, tomato paste and chili powder and salt into a large bowl. Add hot corn and mix well.


Desserts:


Texas Pecan Pie- Very rich pie; you'll want to share with friends and family.
3 large eggs
1 cup brown sugar
1 cup white syrup
1/4 cup melted butter
1/2 teaspoon salt
1 teaspoon vanilla
1 cup pecans

Mix all ingredients well and pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then redue heat to 350 degrees, for 45 minutes.


Wiskey Pecan Cake
1 stick butter
1 cup sugar
3 eggs (separated)
2 tsp. nutmeg
1 1/2 cups sifted flour
1 tsp. baking powder
1/2 cup whiskey (or fruit juice)
1 cup raisins
2 cups pecan meats, broken

Cream butter and sugar. Add beaten egg yolks, nutmeg, baking powder and 1 cup flour. Add whiskey showly and blend well. In another bowl, toss raisins and nuts with the 1/2 cup remaining flour, and add to mixture. Fold in the beaten egg whites. Bake in a greased tube pan for 1 hour and 15 minutes, at 325 degrees. Cool 30 minutes in the pan before removing.
