These recipes are my collection that I love to share. Most I picked up from friends at pot luck dinners or watching my mom cook some Tex-Mex meals. If you have any problems, please e-mail me with any questions. I welcome to know of any variations you know of or created with these recipes. |
Hormel Chili Dip Ingredients: 1 pkg. Cream Cheese 1 can Chili No Beans 1/2 cup Shredded Cheese Nacho Chips |
Directions: Spread cream cheese in 8X8 or 9X9 in a pan. Spread chili on top. Sprinkle cheese to cover. Microwave until heated through. Serve with chips. Yum Yum! |
Fruit Kabobs Ingredients: 1 16oz. can Pineapple Chunks 1 pkg. Cheddar Cheese whole 1 pkg. ham slices Toothpicks |
Directions: Drain pineapples and set aside. Cut up cheese into small chunks. Slice ham into long strips. Pierce a ham, pineapples and cheese into a toothpick. That's it! It so easy and looks really pretty! |
Chicken With
Rice Soup Ingredients: 6 Chicken Pieces 2 Celery Stalks 1 sm. can Mushrooms 2 lg. Carrots 4 handfuls of Long Grain Rice 2 ground Peppercorns 1 tsp. Thyme 1 Chicken Bullion Cube 1 Tbs. Salt 1/4 Onion 2 Bay Leaves 3 Tbs. Tomato Sauce |
Directions:
Stir all items in a large pot. Simmer until Chicken is cooked. Approximately 1 hour. Hmm..Hmm.. so easy and tastes so good on a cold day!

easy breakfast taco's Ingredients: 5 eggs 16 oz. Frozen Hash Browns 1 doz. Flour Tortilla's 1 tsp. Salt 1 tsp. Pepper 1 tsp. Minced Onion *Salsa optional

Directions: Fry hash browns (covered) until cooked. Stir in eggs, salt, pepper, onion until cooked. Heat tortilla's on a griddle for best flavor. Roll potatoes and salsa into the tortillas. Great for breakfast or anytime! |
BEEF ENCHILADAS Ingredients: 1 pd. Ground Beef 1 doz. Corn Tortillas 2 can Red Enchilada Sauce 1 pkg. Taco Seasoning Mix 2 cup Shredded Cheese 1/8 cup Minced Onions 1/4 cup Oil |
Directions: Brown beef and drain. Add taco seasoning and set aside. Heat enchilada sauce until warm in a pot. In a small saucepan heat up oil at medium heat. Fry corn tortilla's approximately 1 min. on each side, just to soften. Place on paper towels. Dip each tortilla in sauce, fill with beef and cheese and roll up, placing open end side down. Utilize a casserole dish or cake pan. Spoon remaining sauce over enchiladas and sprinkle onion and remaining cheese. Utilize more cheese if you like you enchiladas even cheesier. Cook at 350 for approximately 15 min. or until cheese is melted. |
tex-mex taco's Ingredients: 1 lb. Ground Beef 1 pkg. Taco Seasoning 1 doz. Corn Tortilla's 1 Tbs. Ground Cumin 1 tsp Ground Peppercorns 3 Garlic Cloves 1/4 oil Toppings: Shredded Lettuce Chopped Tomatoes Shredded Cheese Avocado Slices |
Directions: Brown beef and drain slightly. Add spices. Fry corn tortilla's in oil until soft but firm on each side. Fill with beef and garnish if desired. Get a taste of real Taco's! |
easy beef burrito's Ingredients: 1 lb. Ground Beef 1 cup Refried Beans 1 pkg. Taco Seasoning Mix 1 cup Shredded Cheese 1 doz. Flour Tortilla's |
Directions: Brown beef and drain. add seasoning and beans in saucepan. Grill flour tortillas or microwave until warm. Fill each tortillas with beef mixture and cheese. Roll up and secure with toothpicks. Fry in oil until brown and crispy. Tastes great topped with guacamole. This is another potluck favorite! |
TOSTONES (fried plantains) Ingredients: 3 Plantains Adobo Seasoning Oil to cover pan |
Directions: Cut plantains in 1/2 inch diagonal slices. Soak in water and add Adobo Seasoning to taste. Fry in hot oil for on med-high heat until yellow removed and flatten. Refry until crispy and edges are light brown. Add salt. |
ranchero beans Ingredients: 1 lb. bag Pinto Beans 1 med. Onion 1/2 bunch Cilantro 1 whole Tomato 3 Chiles (removed from seed) 4 whole Garlic Cloves 1/2 can Beer |
Directions: Mix in a crockpot until beans are cooked and enjoy! |
Joe's baked beans Ingredients: 3 -31 oz. Canned Pork Beans 4 strips Bacon 1/2 cup Molasses 1/2 cup Brown Sugar 1/8 cup minced Onion |
Directions: I recommend you utilize PAM in your casserole dish or cake pan prior to baking. This dish can get sticky. Mix beans, onion, molasses and sugar in the pan. Stir and top with bacon. Taste, if you prefer it sweeter then just add more sugar and molasses. Bake at 350 for 1 hour or if you prefer it a little drier add 15 minutes. This is a great dish for picnics and potlucks! |
dIRT PIE Ingredients: 1 pkg. Oreo Cookies 8 oz. Cream Cheese 1 stick Butter 1 cup Sugar 2 sm. pkg. Vanilla Pudding 3 cup Milk 1 tsp. Vanilla 12 oz. Cool Whip |
Directions: Crush all Oreo cookies and set aside. Mix cream cheese, butter, sugar until smooth and fold in Cool whip. Mix pudding, milk and vanilla until thick. Mix together cram cheese and pudding mixtures in a large bowl. Layer 1/2 of cookies crumbs, all of mixture, then top with remaining crumbs. Chill in fridge for 1 day or freezer for 2-3 hours. This is a big favorite with everybody! |
Tex-mex wedding cookies Ingredients: 22 cups Flour 1 lg. can Shortening 1 pd. Butter 2 eggs 2 Tbs. Vanilla 1 lg. can Pet Milk 2 cup Sugar 1 cup Crushed Pecans 2 tsp. Baking Soda TOPPING:1 cup Sugar,1/4 cup Cinnamon |
Directions: In a very large bowl, mix all wet items first. Then add dry items, leaving the flour for last. Roll out and cut into circles. Bake at 350 10-11 minutes. Dip warm cookies into topping mixture. Warning: Makes about 7 dozen. It would make enough to feed a wedding party. I love to makes these at Christmas and give to the neighbors. They taste like shortbread. Is a great accompaniment to coffee. Hmm Hmm Good!

Orange pie Ingredients: 1 Graham Cracker Crust 8 oz. Cream Cheese 2 cups Cool Whip 1 - 6oz. Frozen Orange Juice Can 1 can Condensed Sweet Milk |
Directions: Fold in all ingredients together. Pour into the crust and freeze until firm. Very delicious and perfect for a cool dessert. Reminds me of orange sherbet ice cream. |
empenada (sweet potato pies) Ingredients: 4 Sweet Potatoes 2 1/2 cup Flour 1 pkg. dry yeast 6 Tbs. Shortening 2 Tbs. Brown Sugar Sugar Anise Seeds Cinnamon |
Directions: Boil potatoes. In a bowl add yeast to 1 cup warm water and sit. Mix flour, anise, 2 tsp cinnamon, 7 Tbs. sugar, shortening and knead. Add 1/2 cup of yeast mixture and cover. Peel potatoes and add 9 Tbs. sugar, 1 Tbs. cinnamon, 1 Tbs. anise seeds and smash. Add more cinnamon if needed. Cook over warm heat and add brown sugar. Roll dough into tortillas and fill with cooked potatoes. Fold in half and close shut with a fork. Bake pastries at 350 until light brown. |
Shaving Creme Punch Ingredients 1/2 gallon Sherbert (any flavor) 2 liter 7up or Sprite |
Directions In a punch bowl or any large bowl stir soda with the Sherbert ice cream. Do not overstir or the foam will be less. This punch tastes wonderful, adults and kids enjoy it Use Lime sherbert for a more shaving creme color. My personal favorite is Orange....Hmm Hmm Good! |
