The following recipes I have collected through the years from various sources, Cook Books, Magazines, News Papers, The Back of Boxes and from friends. Some are over 40 years old and passed down to my children and grandchildren.

~ Yummy Squares ~

  • 1-1/2 - Cups Sifted Cake Flour
  • 1/2 - Teaspoon Salt
  • 1 - Teaspoon Baking Powder
  • 1/2 Cup Shortening (Crisco)
  • 1 - Cup Granulated Sugar
  • 2 - Eggs -- Well Beaten
  • 1 - Teaspoon Vanilla Flavoring

~ Topping ~

  • 1 - Egg White
  • 1 - Cup Brown Sugar
  • 1/2 - Cup Chopped Nuts

Heat oven to 375 degrees. Sift first 3 ingredients, set aside. Work Shortening with spoon until creamy; Add Granulated Sugar and slowly continue to work until light, add Eggs, Vanilla then Flour mixture. Mix well. Spread in greased pan about 12x8x1.
Beat Egg White stiff, add Brown Sugar and continue to beat until stiff. Fold in nuts. Spread on mixture in pan. Bake for 25 minutes or until done. Cut into 2 inch squares while still warm. Yields 24 Cookies.

The Yummy Squares were our family favorite and I kept it secret for more than 40 years, no matter how much others begged for the recipe. When my children grew up and wanted some to eat they would have to come to my house, but just a few years ago I began to give it to my daughter, daughters in-law and grand daughters. And now for the first time I'm offering it to all my cyber friends. Try it you'll like it.
