Apple Bran


1 cup "All Bran"
1/4 cup milk
1 cup baked apples
1/3 cup vegetable oil
1 egg
1 1/2 cup flour
3 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/3 cup brown sugar

Mix bran, milk, apples, oil and egg. Mix in another bowl the dry ingredients. Add the wet ingredients to the dry ones; mix gently just enough to himidify. Bake at 375°, 15-20 mins. (You can add dry raisins and/or nuts to the recipe if you like).

Best Ever Banana Muffins


3 large bananas
3/4 cup white sugar
1 egg
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cup flour
1/3 cup melted butter

Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add the dry ingredients. Bake at 375° for 20 mins. (Makes 12)

You can also add brown sugar to the tops of the muffins before baking. This make them crunchy on top...

Blueberry


1/2 cup butter
1 1/4 cups sugar
2 eggs
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 1/2 cups blueberries
1/2 cup milk
sugar for topping

Cream butter & sugar; add eggs and mix well. Sift dry ingredients and add to creamed mixture alternately with milk. Fold in blueberries. Pour into paper-lined muffin pan, dividing whole batter among 12 cups, and sprinkle with sugar. Bake at 375° for 20-25 minutes--sometimes takes a bit longer if batter is really cold from using frozen berries (don't need to defrost them). Cool in pan.
Notes: Do not use the blueberries in heavy syrup, use butter not margarine. If you want to use apple instead, use about 2 1/2 cups, chopped into small pieces, and then sprinkled with cinnamon-sugar. These muffins are HUGE and really good!

Carrot Raisin


2 cups flour
1 1/3 cup sugar
2 tsp baking soda
2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
2 cups grated carrot
1/2 cup raisins
1/2 cup chopped pecans
1/2 cup sweetened shredded coconut
1 cup peeled, cored, grated apple
3 lg eggs
3/4 cup vegetable oil
1/4 cup orange juice
2 tsp vanilla

Preheat oven to 350°. Sift together first six ingredients. Stir in carrot, raisins, pecans, coconut, apple. In separate bowl, beat eggs together with oil, juice, and vanilla. Stir liguid mix into flour mix. Spoon batter into well greased muffin tins. Bake for 35 mins or until done. Cool 5-10 mins and then turn out to cool further.

Six Week Bran Muffins


4 cups bran flakes cereal
2 cups all bran cereal
2 cups boiling water
1 cup butter or margarine, softened
1 1/2 cups granulated sugar
1 1/2 cups brown sugar, packed
4 eggs
4 cups buttermilk
1/4 cup molasses(optional)
5 cups all-purpose flour
2 tbs baking soda
1 tbs baking powder
1 tsp salt
2 cups raisins

In large bowl combine cereals and boiling water. Let stand.
In mixing bowl cream butter and sugars together. Add eggs one at a time beating well after each addition. Mix in buttermilk. Add molasses. Stir in cereal mixture.
In another bowl combine flour, soda, baking powder, salt and raisins. Mix thoroughly. Add to batter. Stir just to combine. Store in refrigerator. It will keep for six weeks. As required, fill greased muffin cups 3/4 full. Bake in 400 oven for 20-25 minutes. Remove from pan after 5 minutes.
Variations: Brans may be switched to use 2 cups bran flakes and 4 cups all bran cereal. Or you may use natural bran to replace one cereal.

Banana Muffins


1 3/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter or margarine, softened
1 1/4 cups granulated sugar
2 eggs
1/4 cup sour cream
1 cup mashed bananas (3 medium)

Put flour, soda and salt in large bowl. Stir. Make a well in center.
In another bowl cream butter, sugar and one egg. Beat in second egg. Mix in sour cream and bananas. Pour into well and stir to mix. Ignore lumps. Fill greased cups 3/4 full. Bake in 400 oven for 20-25 minutes. Yield:16 muffins.

Coffee Cake Muffins


1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cup butter or margarine, softened
1/2 cup granulated sugar
1 egg
3/4 cup milk
1/2 tsp vanilla

Combine flour, baking powder and salt in large bowl. Stir. Make a well in center.
In another bowl combine butter, sugar and egg. Beat well. Mix in milk and vanilla. Pour into well. Stir just to moisten. Spoon part of batter into greased muffin cups 1/3 full. Sprinkle spice mix over top. Spoon rest of batter over top filling to 2/3 full. Bake in 400 oven for 20-25 minutes. Yield: 12 muffins.

Spice Mix:
1/2 cup brown sugar, packed
2 tbs all-purpose flour
1 tsp cinnamon

In small bowl combine all ingredients. Stir well. Sprinkle over batter as directed above.

Carrot Spice Muffins


1 1/2 cups all-purpose flour
1 1/2 cups natural bran
1/4 cup wheat germ
1/2 cup brown sugar, packed
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
2 eggs
1/4 cup molasses
1/4 cup cooking oil
1 1/2 cups milk
2 tbs vinegar
1 cup grated carrot
1/2 cup chopped walnuts(optional)
1 cup chopped dates or raisins

Combine first 8 ingredients in large bowl. Make a well in center.
Beat eggs in separate bowl. Add all remaining ingredients and stir to mix. Pour into well. Stir just enough to moisten. Fill greased muffin cups 3/4 full. Bake in 400 oven for 20-25 minutes. Makes 36.

Cranberry Muffins


2 cups all-purpose flour
1/2 cu granulated sugar
4 tsp baking powder
1/2 tsp salt
2 eggs
1/4 cup cooking oil
1/2 cup milk
1 cup whole cranberry sauce

Topping:
butter or margarine, melted
granulated sugar, sprinkle

Measure flour, sugar, baking powder and salt into large bowl. Stir thoroughly. Make a well in center.
In separate bowl beat eggs until frothy. Mix in cooking oil, milk and cranberries. Pour into well. Stir just to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake in 400 oven for 20-25 minutes. Makes 18-24 muffins.
Brush hot cooked muffin tops with melted butter. Sprinkle with granulated sugar.

Spiced Apple Muffins

2 cups all-purpose flour
1 cup bran flakes
2/3 cup brown sugar, packed
1 tbs baking powder
1 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 eggs
2/3 cup milk
1/4 cup cooking oil
1 cup grated peeled apple

In mixing bowl, combine flour, bran flakes, sugar, baking powder, salt and spices. Fluff together with a fork to thoroughly distribute baking powder. Push mixture up sides of bowl, making a well in center.
In medium bowl beat eggs slightly. Add milk, cooking oil and apple. Stir together. Pour into well. Stir quickly to moisten. Batter will be lumpy. Spoon into greased muffin cups. Bake in 400 oven for 15-20 minutes. Yield:16 muffins.
