Marinades

Tomato Marinade


7 1/2 oz tomato sauce
1/2 cup cider vinegar
1 tbsp dry onion flakes
2 tsp worcestershire sauce
1 1/2 tbsp granulated sugar
1 tsp prepared mustard
1/2 tsp pepper
1 tsp chili powder
1/4 tsp garlic powder
1/4 cup cooking oil

Combine all ingredients. Pour over meat, cover and refrigerate for 8 hours or overnight.

Onion Soup Marinade


1/2 cup sherry ( or alcohol-free sherry)
1/2 cup soy sauce
1 tbsp lemon juice
1 envelope onion soup mix
2 tbsp brown sugar
2 tbsp cooking oil

Combine all ingredients. Pour over meat and marinate for 3 to 4 hours in refrigerator.

Favorite Marinade


1/2 cup soy sauce
1/2 cup sherry or red wine vinegar
3 tbsp vinegar
2 tbsp cooking oil
2 tbsp granulated sugar
1/2 tsp ginger
1/4 tsp garlic powder
1/4 tsp pepper

Comgine all ingredients. Stir well...pour over meat. Let marinate in refrigerator about 18-20 hours.
Pour marinade into small saucepan. Stir 1 tbsp cornstarch into 2 tbsp water. Add to marinade. Heat and stir over medium heat until it boils and thickens. Baste meat often during last part of cooking.

Teriyaki Marinade


2/3 cup soy sauce
1/2 cup brown sugar, packed
1/4 cup sherry (or alcohol-free sherry)
2 tbsp cooking oil
1 tsp ginger
1 garlic clove, minced
1/2 tsp seasoned salt

Combine ingredients. Stir well. Pour over meat and marinate in refrigerator for 2 days. Before cooking let stand at room temperature for 1/2 hour.

Satay Marinade


2/3 cup soy sauce
1/3 cup granulated sugar
2 tbsp ketchup
2 tbsp cooking oil
1/2 tsp ginger powder
1/4 tsp garlic powder
1/4 tsp onion powder

In bowl that has a tight-fitting cover mix soy sauce, sugar, ketchup, cooking oil, ginger, garlic powder and onion powder. Stir well. Add meat strips pressing down to cover with sauce. Cover bowl. Marinate for 1/2 to 1 hour or longer if you want to prepare well ahead of time.

Ginger Marinade


3 tbsp soy sauce
2 tbsp oyster sauce
1 1/2 tbsp finely chopped ginger
2 tbsp sherry
1 tbsp cornstarch
1 tsp granulated sugar
1/2 tsp salt

Combine all ingredients, add meat and refrigerate for 30 minutes.

Lemon Marinade


1/2 cup cooking oil
1 juice of small lemon
1 rind of lemon, sliced
1/4 tsp garlic powder
1/4 tsp salt
1/2 tsp thyme
1/4 tsp seasoned salt
pepper, light sprinkle
1/8 tsp hot pepper sauce(optional)

Mix all ingredients together in deep bowl. Add shrimp. Marinate 1 hour.

Lemon Marinade II


1/3 cup lemon juice
1/4 cup cooking oil
1 tbsp worcestershire sauce
1/2 tsp onion salt
1/2 tsp celery salt

Combine all ingredients. Marinate meat for at least 30 minutes.
Great used on chicken.
