Quick-Salsa Recipe


1 1/2 cup no salt tomato or V-8 juice
1 tsp cumin
1 tsp oregano
1 tsp garlic powder
1 tsp finely chopped cilantro
pepper sauce to taste (try 10 drops first)

In a 12 oz jar, put onions, then all other dried, fresh or frozen ingredients. Add juice and hot sauce, shake and let sit overnight in the refrigerator. Open, add more juice to top, shake very well, serve.

Super-Bowl Salsa


1 32-oz can whole tomatoes
1 8-oz can tomato sauce
8 hot roasted green chilis(about 1 1/2 cups)
3 green onions
1-2 cloves garlic
1-2 tbs dried red chili
chopped cilantro

Chop green onions into 1" chunks. Place green chili and onions, and garlic in food processor and whip until it's all good and chopped. Add drained whole tomatoes, tomato sauce, dried chili, and cilantro. Whip until the mixture is not too chuncky, but not liquified either.

Texas-Salsa


4 medium tomatoes chopped medium fine
1 small onion chopped fine
1 small jalapeno or 3 serranos chopped fine
6-12 sprigs of cilantro chopped fine
1 tsp salt

Combine & enjoy.
The author says to process in a food blender and use within 3 hours. But it keeps for several days in the fridge. If you use jalapenos, it retains most of it's heat but if you use serranos, it is very mild by the next day.
Use on taco salads and baked potatoes. After most of the heat has died down it makes a very good vegetable dish.

Norman's Salsa


4-6 peeled and seeded tomatoes
4 finely chopped green onions
1/2 finely chopped white onions
1 finely chopped green bell pepper
2-3 chopped jalapenos
1 tbs salt
a dash of black pepper
4-5 tbs vinegar, add to your taste
1 lime or lemon - juiced

Combine all ingredients together and chill in refrigerator for about 30 minutes before serving.

Hugo Q Corona's Chile Serrano Salsa


6 red tomato's - roasted in a pan
4 red chili Serrano's - roasted in a pan
3 cloves of garlic
salt and pepper - to taste

Let ingredients cool, then liquidize everything to a semi fine consistency. Sounds simple but tastes wonderful!

San Antonio Salsa


6 chopped tomatoes
3 green onions, chopped
1 small jar taco sauce or your favorite salsa
5-6 tbs vinegar
dash of pepper
2 dashes of tabasco sauce
salt to taste

Combine all ingredients. Let stand for about 15 minutes before serving with tortilla chips.

Gina Lopez's Fresh Salsa


4-6 fresh tomatoes, seeded and finely chopped
2-4 fresh jalapeno peppers, seeded and finely minced
6-8 green onions, white parts only, finely minced
2-4 tbs fresh cilantro, finely minced
salt and pepper, to taste

Mix everything together and let sit for at least 30 minutes before serving.
