Chicken&Rice

  • 1 6oz. box of uncle bens long grain wild rice
  • 2-3 slices of bacon
  • 1 can of golden mushroom soup

    Use a 9 by 12 pan, line the bottom of that pan with the bacon. Pour the rice on top of the bacon,layer the chicken on the rice, sprinkle the seasoning on top of the chicken.Mix the can of soup with 1/2 can of water,pour over the chicken,cover and bake for 1- 1/2 hours.I serve mine with crescent rolls!(This recipe was given to from a good friend of mine.)

    Chicken Cutlets

  • 1 to 2 pounds of boneless chicken breast
  • 8 to 10 cloves of fresh garlic chopped fine
  • 1/4 to 1/2 cup fo fresh parsley chopped fine
  • 1 to 2 small containers of plain bread crumbs
  • salt to your taste
  • black pepper to your taste
  • oil for frying
  • 4 to 6 large eggs

    Slice the chicken into thin pieces do not cut into strips! Mix the bread crumbs, fresh garlic, fresh parsley, salt and black pepper, I add some grated cheese at this point(Like ramono) Scramble the eggs and season with black pepper to, dip the chicken into eggs then dip it into the bread crumb mixture. Fry in hot oil until golden brown, make sure the chicken is cooked well inside. For really good flavor use lots of garlic,parsley and cheese!

    My Fried Chicken

  • 1 whole fryer chicken cut up
  • 1 to 1 1/2 teaspoons of seasoned salt
  • 1 to 1 1/2 teaspoons of garlic salt or garlic powder
  • 1/4 teaspoon of black pepper
  • 1 to 2 packages of saltine crackers

    Crush the crackers fine, mix in all of the seasonings with the crackers. Beat 4 to 6 eggs with a little bit of water and season with black pepper. Wash and pat the chicken dry, dip the chicken into the eggs and then into the cracker mixture. Place in the refigirator for at least 1/2 hour so the breading will stick to the chicken better. Fry in hot oil until the juices run clear.

    Caribbean Jerk Marinated Chicken

  • 3 tablespoons of *McCORMICK/SCHILLING CARIBBEAN JERK SEASONING
  • 3 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of cider vinegar
  • 2 pounds of chicken parts

    Combine the jerk seasoning, vegetable oil, soy sauce and vinegar in a large glass dish. Remove the skin from the chicken if desired. Add the chicken to the marinade; marinade for 30 minutes in the refrigerator. Remove the chicken from the marinade; discard the remaining marinade. Broil or grill fro 30 minutes or until done, turning frequently. **Recipe taken from my cookbook *Best Recipes*
