Potato Casserole
2 lbs. frozen hashbrowns   1 pt. sour cream
1/2 C. melted margarine   2 C. grated American  1 tsp. salt     Cheese
1/2 tsp. pepper    1/4 C. oleo
2 T. dried minced onions   2 C. Corn Flakes crushed
1 Can Cream of Chicken Soup  or dried bread crumbs
 
Thaw potatoes before mixing.   Mix hashbrowns, 1/2 c melted oleo, salt, pepper,onions, soup, sourcream and cheese well.  Put in 9x13" buttered baking dish.  Mix 1/4 cut melted oleo with Corn Flakes or bread crumbs and spread on top.  Bake 45 min to 1 hour at 350 degrees.    
Tip:  It is much easier to be critical than to be correct.
Cavatini
1 lb. pizza sausage   1/2 box curly roni noodles
1 (2 oz.) jar mushrooms  1/2 box rigatoni noodles
1 pkg pepperoni   2 small or 1 large jar of Prego
Mozzerella Cheese      Spaghetti Sauce thick and zesty
       with meat
 
Cook sausage, drain.  Add mushrooms, pepperoni and Prego.  Add noodles (already cooked.).  Put in 9x13" greased baking dish.  Spread cheese on top.  Bake at 350 degrees until cheese is melted.  
Serve with Garlic Bread.  
 
 
Cheddar Biscuit BBQ
1-1/2 lb. ground beef   1 c. chopped onion
1-3/4 c. pork and beans   1 c. tomato soup
1 tsp. chili powder    1/2 tsp. paprika
1/2 tsp. garlic powder   1 can Pillsbury biscuits
 
Brown and drain ground beef and onion.  Stir in beans, soup and seasoning.  Bring to a boil, spoon into a casserole dish.  Place biscuits on top of hot mixture and cover with cheese.  Bake 350 degrees for 25 to 30 minutes.  Serves 8.  
Summer Drink
1/2 glass 7 up or Sprite
1/2 glass orange juice
Ice
This can be mixed in blender with crushed ice to make a slushie.  
Kids love it.
Beef Potato Boats
1-1/2 lbs. hamburger   1/2 C. onion (chopped)
1/4 C green pepper (chopped)  1/4 C. celery (chopped)
1/4 tsp nutmeg (opt)   1 tsp salt
1 (8 oz) can tomato sauce  1/8 tsp. pepper
1 C. cheddar cheese (shredded)  4 medium potatoes         (baked)
 
Brown ground beef, onion, pepper and celery in skillet.  Drain, add seasonings and sauce.  Cut potatoes in half lengthwise.  Scoop out and reserve shell.  Mash potaotes, combine with meat mixture and fill shells.  Place in baking pan.  Sprinkle cheese on top.  Bake 15 minutes at 400 degrees.  Makes 4 servings.
Cowboy Spuds
1 pkg. hash browns   1/4 C. oleo (melted)
1 large carton sour cream   1 lb. hamburger
1 can cream of mushroom or  1 large onion (chopped)
  celery soup    1/2 tsp. celery salt
1 pkg. yellow or white shredded  Potato chips (crushed)
  cheese     1/4 C. oleo melted
 
In a large bowl, combine hash browns, sour cream, soup, cheese and melted oleo.  Brown hamburger and onion together and drain.  Add celery salt.  Add to hash brown mixture.  Pour in a 9x13" pan.  Top with crushed potato chips.  Pour 1/4 c. melted oleo over the top.  Bake at 350 degrees 30 to 60 minutes.
Quick Buscuits
2 C. flour    3/4 C. milk
2 Tbs. Crisco   4 tsp. Baking Powder
1 tsp. salt
 
Sift flour, salt and baking powder, then mix in Crisco with fork.  Add milk slowly to make a soft dough.  Roll 1 inch thick.  Cut with cookie cutter.  Bake 350 degrees until golden brown.
Pasta Salad
1 pkg pasta shells    2 Carrots (grated)
1 can peas (drained)   2 C Miracle Whip
2 Tbs. Vinegar    Salt and Pepper
3 Tbs. Sugar
 
Cook pasta as directed.  Drain and cool.  Mix Miracle whip, vinegar, sugar and salt and pepper.  Combine with pasta, carrots and peas.  Chill for 2 hours.
Rice Dish
1 C. rice (uncooked)  1 can corn
2 T. oleo    Soy Sauce
1/2 lb. ham (diced)
Cook rice according to package directions.  Dice ham.  Put oleo in skillet and melt.  Add ham and stirfry.  Add corn and rice and soy sauce to taste.  Stir together and heat thoroughly.  Serve hot.
Chicken Casserole
1 pkg. chicken stove top stuffing
2 cans chunk chicken (or leftover chicken cubed)
1 can cream of chicken soup
Prepare stove top stuffing as directed.  Add chicken and put in a 9x13" pan.  Bake at 350 degrees for 30 minutes.   Easy and fast.
Perfect Velvety Custard Pie
4 eggs (slightly beaten)  1/2 C. sugar
1/4 tsp. salt    1 tsp. vanilla
2-1/2 C scalded milk  1 (9" ) pie shell (unbaked)
Mix beaten eggs, sugar, salt and vanilla.  Slowly stir in hot milk and add a dash of nutmeg.  Bake 475 degrees for 5 minutes, then 425 degrees for 10 minutes or until silver knife inserted in center comes out clean.
Swedish Meatballs
1 lb. ground beef   1 tsp salt
2/3 C. dry bread crumbs  1 can celery soup
1 egg     1/2 soup can of water
2 Tbs. minced onions  1 Tbs. parsley (optional)
Mix ground beef, bread crumbs, egg, onions, parsley and salt.  Mix celery soup and water.  Remove 1/4 C. and add to meat mixture.  Shape in balls and brown in a little shortening.  Add remaining soup and cove.  Cook on low about 20 minutes.  Great with noodles.
Chicken Casserole
2 c. cream of chicken soup  2 bags cheddar cheese
2 c. chicken broth    1 bag macaroni
2 c. white chicken     Salt to taste
Mix soup, chicken, broth, 1 bag of cheese and macaroni.  Pour into a 9x13" pan.  Pour 1 bag of cheddar cheese over top and bake at 350 degrees for 45 minutes to 1 hour.
Cinnamon Bread
4 Tbs. sugar    1/2 c. shortening
1 egg, beaten   2/3 c. milk
2 c. flour    1/2 tsp. salt
1/2 tsp. cream of tartar  1 tsp. cinnamon
Mix sugar, shortening, egg and milk, then add dry ingredients.  Grease and flour loaf pan.  Bake at 375 degrees for 35 minutes.  While still hot brush with butter and sprinkle cinnamon and sugar over top.
Applesauce Cake
1 c. sugar    1 c. applesauce
1/2 c. shortening  1 c. raisins
1 egg    1 tsp. soda
1-3/4 c. flour   1 tsp. vanilla
1/2 tsp. allspice  1 tsp. cinnamon
Combine by cake method.  Pour into a 9x13" pan and bake at 350 degrees for 40 minutes.
Steak & Potatoes
1 Round Steak    6-8 medium Potatoes
1 Can Cream of Mushroom Soup 1 soup can of milk
 
Cut round steak in strips (tenderize) and brown in skillet.  Place in bottom of baking dish.  Cover with sliced potatoes.  Mix milk and soup and pour over steak and potatoes.  Bake 350 until meat and potatoes are tender.  Around 1 hour.
Can adjust meat and potatoes to size of your family.  This serves 4 people.
Cream of Cauliflower Soup
1 c. cauliflower, broccoli  2 c. milk
 or 1/2 c. each  1/4 tsp. salt
1 c. chopped Velveeta  Cornstarch to thicken
1 Tbs. butter
Chop vegetables fine.  Put in microwave-proof  bowl.  Almost cover veggies with water and salt.  Cook about 3 minutes on high or just until tender.  Do Not Drain.  Add cheese and butter.  Put back in microwave for 1 minute on high.  When cheese is melted add milk.  Heat 1-1/2 minutes on high.  Mix cornstartch and water to slightly thicken soup, if desired.  Also makes great broccoli soup.
Pork Chop Casserole
6 Pork Chops    1 Canister Stove Top Stuffing
15 Oz Can Chicken Broth  
Brown Chops.  Place in bottom of Casserole.  Mix stuffing as directed and spoon on top of chops.  Pour chicken broth over top.  Seal with foil and bake at 350 degrees for 45 minutes to one hour (until meat is tender.).
Serve with lettuce salad.
Swedish Ham Balls
1/2 Lb. Ground Ham   1/4 Lb. Ground Beef
1/4 Lb. Sausage   1/2 C. Milk
1/2 C. Bread Crumbs   Lawry's Seasoning
1 Egg    
 
Mix ingredients together, form into balls.  Place the balls in shallow pan.  
Sauce:  1/2 C. Brown Sugar  1/2 C. Water
  1/2 tsp. Mustard  1 Tbs. Vinegar
Mix ingredients and pour over meat balls.  Bake in oven 1 hour at 350 degrees.  Basting every 15 minutes.  
Serve with baked potatoes.
 
Strawberry Cake Dessert
1 White Cake Mix prepared as directed.
With fork poke holes all through cake while still warm.
 
Mix 1 - 3 ounce package of Strawberry Jello and 1-1/2 C boiling water.  Cool before pouring over warm cake.  Chill completely.  Cover with Cool Whip or Strawberry Whip Topping.
 
 
Peanut Butter Cookies
1 C. Soft Shortening   1 C. Peanut Butter
2 Egg     1 tsp. Vanilla
2-1/2 C. Flour    1 tsp. Salt
1 tsp. Soda    1 C. Sugar
1 C. Brown Sugar
 
Mix shortening and sugar.  Beat eggs well and add to first mix.  Add peanut butter and mix well.  Add salt soda and vanilla, mix well.  Add flour last.   Roll into balls about quarter size.  Flatten with fork forming criss cross.  Bake 350 degrees for about 10 minutes.
