OKRA
Hibiscus esculentus l.
Use for food. Okra seed has much higher nutritional value that soya seed, but lower in protein. Okra seed is high in iron, calcium, niacin and vitamin E. Amino acid levels of okra proteins are equal to or exceed the levels of eggs or casein. And while soybean may be higher in thiamine and riboflavin, in fact, okra seed oil contains the same amount of vitamin E as crude cottonseed oil does, but more than double the amount of soybean oil. But the problem with cottonseed oil is that it contains a toxic phenolic compound, gossypol, which has been known to cause death in livestock. Fortunately though, okra seeds are relatively free of this harmful compound. Margarine is often a combination of 75% soybean oil and 25% cottonseed oil. Some scientists believe that okra seed could replace the latter with greater nutritional benefits all around. The report, from which this information has been obtained, concluded that "okra seeds meet all the requirements of a rich protein food or feed and should be explored further." (Pavlos A. OLIVE, GREEN
Olive oil and fermented olive juice prevent infection from setting in. After slight fermentation this herb becomes antimicrobial and inhibits the growth of bacteria and yeast. The substances aglucone and elenolic acid only occur during hydrolysis or the chemical decomposition of oleuropein when water is added.

Used to stabilize heart rhythm and raise low blood pressure when the leaves are dried and fermented.
