Whipped Chipotle Sweet Potatoes

   5 1/2  pounds        sweet potatoes (about 8 large) -- scrubbed
   1 1/2                canned chipotle chilies in adobo sauce -- minced and mashed
   3      tablespoons   unsalted butter

Preheat oven to 450 degrees F and line a baking sheet with foil.
Prick potatoes and bake in middle of oven 1 to 1 1/2 hours, or until very  soft.  Cool potatoes until they can be handled and scoop flesh into a  bowl.  With an electric mixer beat potatoes with chili paste, butter, and  salt and pepper to taste just until smooth and spread in a buttered  2-quart shallow baking dish.  Potatoes may be prepared up to this point 1  day ahead and chilled, covered.  Bring potatoes to room temperature before  proceeding.
Reduce oven temperature to 350 degrees F.  Bake potatoes in middle of oven  until hot, 20 to 25 minutes.  Serves 8.

Zuchinni Quiche

2     cups       zuchinni -- diced
     1/2  cup           onions -- chopped
     1/2  cup           celery -- chopped
   2      tablespoons   butter
   1      tsp           salt
     1/4  tsp           nutmeg
     1/2  cup           lowfat cottage cheese
   1      cup           swiss cheese -- grated
   2      large         eggs
   1      cup           1% low-fat milk
     1/2  tsp           pepper
 

Saute onion, zuchinni, and celery in butter until vegetables are soft.  Oil a 9"x9" baking dish.  Spread cottage cheese over bottom.  Spread vegetable mixture over cottage cheese.  Sprinkle swiss cheese over top.  Combine eggs, milk, and seasonings and pour over all.  Bake at 350 for 40-45 minutes or until set.

Sesame Stir Fried Spinach

   1      bunch         fresh spinach -- stems removed
   1      teaspoon      canola oil
   1      teaspoon      sesame oil
     1/2  teaspoon      chili garlic sauce -- (in Oriental section
                         -- at market)
     1/2  teaspoon      sesame seeds -- toasted
                        kosher salt -- to taste

Rinse and clean spinach well.  Drain and pat dry.  In a large skillet or wok, heat both canola and sesame oils and add garlic chili paste.  Stir to blend.  Add spinach, a little at a time, until wilted.  Take off heat and garnish with toasted sesame seeds.  Salt to taste.

Sesame Noodles with Peanuts

     1/2  pound         whole wheat angel hair pasta -- such as Hodgson's
   2      tablespoons   sesame oil
   1      bunch         green onions -- sliced
   2      cloves        garlic -- minced
     1/4  teaspoon      dried hot red pepper flakes
   1      tablespoon    rice wine vinegar
   1      teaspoon      sugar substitute -- spoonable
   1      tablespoon    soy sauce
     1/2  cup           salted dry roasted peanuts -- finely chopped
     1/3  cup           cilantro -- chopped

In a pot of boiling salted water, cook pasta until al dente.  Drain in colander and immediately toss with 2 tablespoons
sesame oil.  Add the remaining ingredients, toss and transfer to a serving bowl.

                    Sweet Potatoes Stuffed Cajun Style

   4                    sweet potatoes -- 1/2-3/4 lb. each
     1/2  cup           onions -- finely chopped
   1      tablespoon    olive oil
     1/2  cup           celery -- deveined and finely
                         -- chopped
   1      large         tomato -- peeled, finely diced
     1/2  cup           okra -- cooked, finely chopp
   1      tablespoon    salt-free Cajun spice

Preheat oven to 400 degrees. Scrub sweet potatoes, dry, and set on a cookie
sheet. Bake for about an hour. Meanwhile, in a skillet, saute onions in oil.
When soft, add celery, cover, reduce heat, and steam (add a few spoons of hot
water if needed). Add tomatoes, okra, and seasonings. Mix well. When sweet
potatoes are done, remove from oven, slice off a top layer, and remove pulp from
shells. Place pulp in a bowl, blend well with Cajun-style filling and stuff
shells with mixture. Return to oven and heat until warm. Makes 4 servings

                           Wild Rice Casserole

   1      cup           wild rice -- barley, or
                         -- combination
     1/4  cup           butter
     1/4  cup           minced onion
   4      ounces        mushrooms pieces -- canned, drained
   3      cups          chicken broth

Wash rice, melt butter in casserole. Add onions. Remove from heat. Add
mushrooms and broth and rice. Cover with foil. Bake 1 to 1 1/2 hours at 325
degrees.
