Cucumber & Tomato Raita

Ingredients

  • 7 fl oz Natural Yoghurt

  • 1 Tsp Mint Sauce

  • 2 Desertspoons chopped coriander leaves

  • Pinch of chilli powder

  • 1 Tomato, chopped

  • 1 piece of cucumber 3 inches long (75 mm)

  • Salt to taste

Method

Peels and chop the cucumber. Place the yoghurt in a bowl, beat gently with a fork until creamy. Add cucumber, tomato, mint and 1½ desertspoonfuls chopped coriander leaves. Mix well and chill. garnish with the remaining coriander leaves and chilli.
