Meat Curry (2)

  • Meat (Chicken, Beef, etc.)
  • Sunflower oil
  • 2 Large onions
  • tsp dried chilli powder
  • 3 - 4 Cardamom pods
  • tsp Turmeric powder
  • Coriander powder
  • 1 tsp. Garla masala powder
  • 1 Tin chopped tomatoes
  • Fresh Garlic (crushed)
  • Root ginger (crushed)
  • Fresh coriander (remove leaves and chop)
  • 2 Fresh green chilies (chopped)
  • Salt to taste
  • 2 tbsp Tomato puree
  • 1 cup Water
  • Sugar to taste

Heat the oil until it smokes but does not burn. Add the dry chilli powder and cardamom pods. Cook until chilli goes black, but not burned. Add the onion, chilli, garlic and ginger. Cook until onions brown. Add meat and tomatoes. Add water, turmeric, garla masala, coriander powder and salt. taste and add extra if needed. Add tomato puree. Simmer, taste. If bitter add a little sugar. When meat is cooked, add fresh coriander. Cook until meat is tender and coriander turns black.
