Mick Gower's Indian Recipes

Onion Bhaji (1)

  • 8 Medium onions peeled and shredded very finely
  • 1 tsp Salt
  • ½ Garlic powder
  • 2 tbsp Curry powder
  • ½ Chilli powder
  • 2 tsp Red lentils
  • ½ tsp Fennel seeds
  • 2 Beaten eggs
  • 1lb Plain flour
  • 1lb Self-raising flour
  • ½ Pint cold water


Mix together the plain and self-raising flour.

Mix all the other ingredients together (except flour mixture), keep mixing and crumbling the mixture and at the same time pour in the flour mixture with a tablespoon continuously until the ingredients become sticky, like soft dough (you may not need all the flour mixture, if so store the rest in an airtight container until next time).

Try to shape the mixture with your fingers and palms until it is formed like a ping-pong ball and fry four at a time until brown. remove with a slotted spoon and drain.
Serve with minty yoghurt sauce.
