4 slices dry bread
2 eggs
1/2 cup grated parmesan or romano cheese
2 tablespoons chopped parsley
1 clove garlic minced
1 teaspoon crushed oregano or basil
1 teaspoon salt
dash pepper
1 pound lean ground beef
2 tablespoons olive oil


Soak bread in some water 2 or 3 minutes, then squeeze out the water. Combine bread with remaining ingredients except oil, mixing well. Form into small balls (25 to 30). Brown slowly in hot oil.

OR - Preheat oven to 400°. Space meatballs on broiler (after lightly oiling) and bake for 30 minutes for small meatballs, slightly longer if large.
