Chicken Biryani


Ingredients

11/4 lbs chicken
A little cinnamon -1 little pieces
3 cloves
2 cardomom,
1/2 garlic if its medium size
1" ginger crushed
1 decent sized onions

3-4 hot chillies
1 tbsp sombu
nutmeg - 1/4 tsp
salt to taste

Grind the masala. Heat some oil and butter and splutter mustard seeds and saute the masala for a minute and then the onions till they are brown. Cook the meat in it with salt and turmeric.
Rice:
Add butter and oil, add little more spices like 1 small
pieces of cinnamon, 2 cloves, 1 crushed cardomom and some bay leaves. Also add a handful of mint leaves and fry well. then add 1 onions (not chopped fine but thin strands, rice and handful coriander leaves. Add saffron if you like for flavour and some color. Add 1:1.75 water and cook 50%. Then add the gravy and simmer until all the water is gone. Squeeze some lemon juice like 1/8 lime. When you cook the rice add some salt like maybe 1/2 tsp. You can add some powdered nutmeg at the end.
