Potato Lasagna

Ingredients:
10 oz. lean ground pork
1/2 c. chopped onion
1-1/2 c. sliced mushrooms
2 c. Spaghetti sauce
2 T. chopped parsley
6 c. potatoes, thinly sliced
1 c. shredded mozzarella cheese
2 T. grated Parmesan cheese
1 Cl. Garlic (crushed)
Non-stick spray

Directions:
In skillet on medium heat, brown pork and drain well. Add onions, mushrooms and garlic; cook until onion is tender and mushrooms golden. Stir in sauce and parsley, heat thoroughly.

Spray a 2-quart baking dish (9 x 13-inch) with non-stick spray; arrange half of the potato slices. Top with half of meat mixture. Sprinkle 1/2 cup of mozzarella cheese over meat. Top with remaining potatoes and sauce. Cover tightly with foil and bake in a 375 degree F oven for 50 to 60 minutes. Uncover and top with remaining mozzarella cheese and Parmesan cheese. Return to oven for 5 minutes. Let stand 5 minutes before serving. Makes 6 servings.
