Homestyle Zucchini and Tomatoes

Ingredients:
2 tb. Oil
4 1/2 c. Thinly Sliced Zucchini
1 ea. Envelope of powdered Onion Soup Mix
1 ea. Clove of Garlic (crushed)
14 1/2 oz. Can of Tomatoes
1 1/4 ts. Basil Leaves

***Tomatoes should be whole peeled tomatoes. drained and chopped. Reserve the liquid from the tomatoes.


Microwave Directions:
   In 2 quart casserole dish, combine Zucchini with the tomatoes. Stir the Onion Soup Mix with the reserved liquid from the tomatoes, add the basil and garlic. Mix with the tomatoes and zucchini. Cover and heat on high for 5 minutes, stirring once. Remove cover, and heat for 4 more minutes or until zucchini is tender, stirring once.Let stand Covered from 3 to 5 minutes before serving.

This is not like the Zucchini Pie, if you do not like zucchini you probally won't like this one. But try the Zucchini Pie.
