BAKED KING CRAB LEGS

2 dozen frozen,pre-cooked crab legs
1 small can of tomatoe sauce
1 tbl. of olive oil
1/4 cup of melted butter
1 cup of italian flavored bread crumbs
lemon

arrange thawed crab legs on a baking dish/brush with melted butter, and sprinkle with bread crumbs/heat tomatoe sauce, and olive oil, and pour over crab legs/bake at 375 for 20-25 minutes/serve with lemon wedges


CRAB CAKES ITALIAN STYLE
I know they're not italian but they're real good! - I italianized them a bit in this recipe

2 cups of crab meat - fresh or canned
1 medium onion - diced
2 celery stalks - diced
2 tbls. of red pepper - minced
1 1/4 + 3/4 cups of italian seasoned bread crumbs
1/4 tsp salt
1/4 tsp pepper
1 tbls. of parsley - chopped
4tbls of butter
1 tsp. of parmessan cheese - grated
2 eggs - beaten

put crab meat in a mixing bowl - melt butter in a skillet/add onion, celery, & red pepper & saute until soft/add to crab meat/add salt pepper and parsley/add 1 1/4 cups of bread crumbs, parmessan cheese, and eggs & mix all together/make into cakes & dip into remaining bread crumbs/fry in oil until golden brown/serve with fresh lemon wedge.


SOFT SHELL CRABS
these crabs that have shed their shells are delicious fried or sauted.

FRIED

6 fresh or frozen soft shell crabs
1 lg egg - beaten
bread crumbs
salt & pepper
olive oil

heat oil in deep skillet or fryer/dip crabs into egg and then into bread crumbs/fry until light brown serve with lemon wedge.

SAUTED
6 fresh or frozen soft shell crabs
1/4 cup olive oil
2 tbl butter
2 cloves of garlic - crushed
lemon
1 tblsp parsey - chopped
flour
salt & pepper

Heat olive oil & butter in a large skillet, add garlic & brown/dip crabs in flour until coated, saute in pan/sprinkle them with salt,pepper, and parsley,turn and repeat/when done, and on serving dish, spritz lightly with lemon.


CRAB CIOPPINO

2 lg Crabs -cracked
1 lb Shrimp-shelled, and de-veined
1 dozen Fresh small clams
1/2 lb Halibut-cut into 1 inch cubes
3 clves of Garlic -chopped
1 lg Onion - diced
3 tb Fresh parsley -chopped
1/2 ts Sugar
1/2 ts Sweet basil
1/4 c Olive oil
16 oz Tomato paste
1 gallon of Water
1/2 ts Salt
1/2 ts Pepper

Saute the garlic and onion with the olive oil in a large pot until soft/ Add tomato paste, water, salt, pepper, parsley, sugar, and basil. Stir well and simmer 40 minutes/ Add all seafood and cook for 15 minutes.


GRANSEOLA

2 cups of crab meat
dressing
olive oil
lemon juice
parsley
salt and pepper

prepare the dressing/it is customary to serve this crab salad in crab shells but if not available use your imagination/simply dress the crab meat with the dressing, and serve chilled
