Pork chop chili

2 pork chops per person cut into bite size pieces and fried
1 onion for every 2 chops
2 tablespoons chili powder for every 4 chops
1 clove of garlic for every 2 chops
dash of salt
1 can of tomato sauce (small) for every 4 chops

simmer for 2 hours warm tortillas and enjoy


TACO SAUCE-MARVIS

3 GALLONS Tomato Puree(ADD 1 CUP SALT) OR 3 GALLONS tomato sauce(already has salt in it)

FINE GRIND
8 onions
16 bell peppers- quartered and frozen
20 Jalapenos (frozen and stems cut off)

ADD
4 Tablespoons celery seed
20 Cloves OF garlic OR T Tablespoon minced dry garlic
4 Cups white vinegar

HEAT THROUGHLY STIRRING CONSTANTLY

SEAL WITH 1/8TH INCH HEAD ROOM with WATER BATH PROCESS


Mexican Spoon Bread

3/4 cup corn meal
1 can creamed corn
egg beaters or 2 eggs
1 can diced diced green chilies
1 small jar chopped pimentos
1 small can sliced olives
1 1/2 cup flour
1 cup non fat milk
1/4 cup sugar
1/2 tsp. salt
1/4 canola oil
1 Tablespoon of Baking Powder

let the above set for 2 hours,,,,,,,,,,,,,,,,
fry hamburger drain off fat,,,
put 1 cup water in it and bring to a boil,,,
pour off the water add 1 package taco seasoning
put hamburger in bottom of 13x9 pan then pour cornmeal mixture over top,,,
Bake in 350 oven until corn bread is done then lay 6 slices of non fat cheese on top and bake until just melted.
Serve with a salad and salsa



Marvis' Sea Food Chowder Concentrate


saute 2 onions diced in 1/2 cup margarine
juice off 51 oz can clams or clam juice
2 large potatoes peeled and diced
with water to cook potatoes till soft
add clams simmer for 3-4 min
add 1 lb shrimp - shelled cut small
1 lb artifical krab
bring to boil - stir often
thicken with flour and water stir constantly- thick
add salt pepper and season salt to taste (remember, this is a concentrate so flavors strong)
1 quart 1/2 and 1/2 (do not add if canning)
add 1-2 tsp tabasco

freeze

TO USE:
add 1/2 much milk as concentrate if you used half and half and froze
To use canned concentrate add more milk


Red Enchilada Sauce

8 tablespoon flour
1/4 cup cooking oil
4 tablespoons chili powder
4 teaspoons cumin
1 teaspoon salt
4 cloves garlic, crushed
4 cups hot water
1 1/3 cup tomato sauce (or 2 small cans tomato soup)
1 can diced green chilies
1 medium diced onion
2 tablespoon white vinegar

Brown the flour in a large frying pan.
Add the spices,then the oil.
Heat and stir to avoid lumps When smooth, slowly add the water, tomato sauce (or soup), onion, vinegar and green chilies stiring all the time.
When all is smooth, simmer until thick

(Note: I use tomato soup cans rinsed out with the hot water)


Gee I Wish I was Sick Casserole

little bit of hamburger about 1/2 pound
can of stewed tomates (small can)
hand full of mixed frozen veggies about 1/2 small sack or any left over veggies
can of tomato soup
1 diced onion
2 cloves garlic
shredded cheese (cheddar, mozzarella, jack, etc.)

Brown hamburger, add onion and garlice and stir fry, add the rest and simmer a couple minutes, add 1 cup water and take off heat.
Cook 2 cups of macaroni - will make about 4 cups cooked
Mix macaroni in hamburger mixture
Put in baking dish and sprinkle cheese over the top,,, I use about 2 cups cheddar Bake at 350 30 minutes

This recipe was made when my son had the mumps and Krissy came home from school and wanted some and I told her no, this is for Chuck because he is sick. She went into the living room pouting and said "Gee, I wish I was sick". Hence the name.

Remember I made this because I didn't have much meat so I used lots of cooked "garbage" vegetables and home grown tomatos and onions. ANYTHING leftover in the fridge can be added to this, NOT caulfiflower though,, or lettuce. This is a good "clean out the fridge" recipe


Pumpkin Goodie

make pie filling as put on can
take a yellow cake mix and mix 1 cube of butter until crumbly
Put pie mixture in 13x9 pan, put cake mixture on top
Bake 350 for 40 minutes or until clean knife pushed in comes out clean


Pat's easy Hombows

take left over meat,,,, whatever kind you have
celery sliced thin
onion diced fine
garlic minced fine
saute all together then let cool

Take a loaf of frozen bread that has been thawed (frozen rolls are the right size) seperate into balls alittle bigger than golf balls
Roll out each ball thin (1/4 inch thick) and put a batch of the meat mixture down the middle being carefull not to go clear to the end. Roll like you do a burrito then seal the ends.
put on a buttered cookie sheet and put alittle melted butter on the top.
Let set 1 hour (the dough with double in size.
Bake at 350 until the "bread" is done.


Pat's Bean and Cheese Burritos

1 pound of PINTO beans
5 cloves of garlic. diced

Place these in a pan big enough to add 3 times the water and let set overnight.
Add one finely diced onion and 4 cloves of minced garlic and cook until beans are done.
Let set overnight until they are cold then bring to a boil again and let cook until almost all the moisture is used up,,,,, mash and let cool overnight.
Next morning shred up 1 pound of cheddar cheese and mix thru the cold mashed beans

Burrito Tortillas

5 cups of flour, 1 cup of lard 1 tsp salt and 1/4 cup water mixed together.
take a golf sized piece and roll out on floured surface adding flour until it doesnt stick to your roller.
Put a track of bean mixture down the middle, roll, add some water to your fingers and rub along the ends until they are sticky and seal. Do the same along the side and seal it to the rolled burrito.
Place each on a cookie sheet until you have it filled. Freeze overnight.
Next morning make sauce.

SAUCE

1 large can of stewed tomatos drained and diced finely,,,,, save the drained juice to make a stew
1 large onion diced finely
1 T salt
1 tsp. chili powder
Mix together and let set all day
That night get a pan of hot oil and one by one put the frozen burritos in it until they are browned on each side.
Dip in the sauce and enjoy
You can buy frozen burritos and omit 4 days worth of work!!!!!!!!!!!!! Don Miguel's or Reser's


Pat's Bean Dip

use some of the beans from the burrito recipe above or buy a can of refried beans
1 small can of green chilis
finely sliced green onions
Put in micro and cook 1 minute on high,,,,
while still hot mix in 2 slices of american or velveta cheese.
Micro another 30 seconds


CLAM DIP- Tricia's Aunt Flora's

1 pint cottage cheese
1 T mayonaise
1 T Worcestershire sauce
1 T lemon
2 minced cloves of garlic
4 oz. cream cheese

Mix together then add 1 drained can of minced clams and refrigerate at least 2 hours


Egg Burritos

tortillas
eggs
onion
celery
red pepper
bean sprouts

Dice onion (can use green onions), celery, bean sprouts, 1/2 a red pepper,,, then put in large bowl in microwave.
Add 6 eggs and scramble them,,, put in micro on high for 1 minute, stir set eggs into rest, cook another minute,,, stir,,, another minute stir,,,,
heat tortillas in fry pan on top of stove,
turn over put grated cheese down center,
take off stove, add a bunch of eggs and roll the tortilla and serve with same sauce as put in Burrito recipe


Pat's Baked Lima Beans and Ham

3 cloves garlic minced
1 onion diced
1/2 head of celery diced
3 large carrots shredded
Sack of Lima Beans
Ham Hocks
Put all ingredients in roaster about 5 hours before you want to serve it. Add 3 times water as the amount of lima beans. Bake at 350


Pat's Chop Bake

1 pork chop (or chicken breast) per person
1 can cream of mushroom or chicken soup
1 onion sliced
2 cloves of garlic diced
1/2 head of celery
saute meat in fry pan that has a cover, add celery, onions and garlic, add 1 cup of water and simmer 15 minutes, add soup and 1/2 soup can of water. Put lid on and simmer for 15 minutes.
In separate kettle cook rice for 10 minutes or noodles 5 minutes, put partially cooked drained noodles OR rice in baking pan and pour chop mixture on top cover and let bake at 350 30 minutes, the rice or noodles will finish cooking using the "gravy" as the moisture.

Serve with either a relish plate or salad
