What's Cookin'?   It's not quite Spring, but my appetite is getting lighter! Here's some things that have found their way onto our table!
Wilted Spinach with Almonds

1 bag of fresh spinach, or get a bunch out of your garden next month.

Olive oil or butter

Almonds
Bacon (optional)

Heat olive oil or butter on medium heat.
Add  fresh spinach and stir till covered with the oil or butter (a few tablespoons of either should suffice).
Spinach will begin to wilt.
Cover if you can't stir it constantly.
Or stir it and toss it.
Spinach will be bright gree.
Add your almonds at the last minute.
Plunge skilley or pan into a bigger pan to stop cooking.
put bacon on top if you want it, or anything ele that your family will like.
Viola!
Granny Smith Birds Nests
1 Package of Won-tons
Apples enough for your family.
A few Tablespoons of turbinado (raw) sugar or the regular kind
Good Vanilla
One lemon or lemon concentrate.

Core and peel your apples. Cut them into four wedges.

Cut your Won Tons into skinny strips.
Deep fry them in a skillet using the oil of your choosing.
Sugar them, and add cinnamon if you like.
Squeeze the juice of one lemon into a pie pan.
Roll your apple wedges in the lemon juice.

Sprinkle turbinado or regular sugar all over the tops of the apples.

Drip vanilla on the top of the sugar...just a little.

Bake on 350 covered with another pie pan while you eat dinner.

Arange wonton strips into a nest on the plates.

Stack apple wedges on top.
If you eat dairy, pour on a little heavy cream or whipped cream.

If you are dairy free, try a little honey around theedges of the plates.
