MAHDZOON CHICKEN

Ingredients: skinned boneless chicken pieces (~1kg), olive oil, dry white wine, fresh basil, garlic, onions, plain yoghurt, fresh white mushrooms.

Directions: In a large bowl, mix 2 cups olive oil, 1 cup dry white wine, 1/4 cup chopped fresh basil, and several garlic cloves (smashed). Place the chicken in the marinade, cover and refrigerate overnight. Brown the chicken pieces in a skillet, then remove and set aside. In the same pan, brown two sliced onions, then replace the chicken pieces in the pan. Pour 2 cups plain yoghurt over the chicken, cover, and simmer on medium heat for about 30 minutes. About ten minutes before serving, add sliced mushrooms. Serve over basmati rice and sprinkle with chopped basil.

Variations & Substitutions: Fresh cilantro or mint can be substituted for basil. As everyone knows, there is no substitute for olive oil.

Warning: Never reuse marinades.
