Puerto Rican Rice & Beans are one of my all-time favorite cuisines. After coming back from Puerto Rico I brought home with me a recipe that can't be beat. This meal is also great if your on a limited income because you get a tremendous amount of food and don't have to spend a fortune to make it. Samantha and I have been totally living off this stuff. All of the ingredients can be purchase for under $12.00!!
Kitchen Tools Needed: Sauce pan big enough to hold two cups of cooked rice and beans.

Time to get messy! Sprinkling Adobo powder on the pork. Use your hands and rub that adobo powder into the meat. Coat the button of the saucer with Virgin Olive Oil. Slice pork chops in to bite size squares and place them into the sauce (not in a frying pan, everything gets cooked in the saucer). Once the carne (meat) is brown, add water, SoFrito, "Goya Sazon con Culantro Achiote", Knorr Tomato Bouillon, 1 can of olives, and mix well until all spices and sauce are blended thoroughly. Add rice and stir thoroughly again. Let it boil for about 30 seconds. Cover and turn down the heat (I turn it down to 2 on the dial) and simmer for 20 minutes, make sure to cover the rice beans when it's simmering. NO TOCO ARROZ!!! Do not mix it again until after the 20 Minutes are up. After 20 minutes are up add the pinto beans and stir everything together thoroughly. Simmer it on low and cover for an additional 30 minutes. Again TOCO ARROZ!!! unil the 30 minutes are up. And WALLA! You've got authentic rice and beans.
